Asparagus is an undeniable part of spring and so are healthy recipes. This tasteful vegetable is full of vitamins and fibers and it is so easy to make that it could be used as a side-dish for almost everything. And it gets even healthier with this recipe by adding sesame oil and sesame seeds. Not to mention the delicious taste it gets by combining the asparagus with rice vinegar and soy sauce! Try this simple recipe as a side for any of your meals and you will not be disappointed.
Sesame Asparagus Salad

Easy Recipe: Sesame Asparagus Salad
Ingredients
1 1/2 to 2 pounds fresh asparagus, trimmed
2 tablespoons plus 2 teaspoons dark sesame oil
1 tablespoon plus 1 teaspoon rice vinegar
1 tablespoon plus 1 teaspoon soy sauce
1 teaspoon sugar
1 tablespoon white and black sesame seeds, toasted

Directions
Bring water to a boil in a medium pot.
Prepare a coriander and iced water and set aside.
Once the water comes to a boil, carefully add the asparagus and cook for about 4 to 5 minutes or until crisp-tender.
Drain the asparagus and immediately plunge asparagus into the prepared ice water to stop the cooking process and drain again.
In a large bowl, whisk together sesame oil and next 3 ingredients.
Add the asparagus and toss gently to combine everything.
Arrange on a serving dish and sprinkle some sesame seeds on top. Enjoy!
