There’s no reason to give up pasta dishes when you’re trying to focus on healthy meals. This Spaghetti Squash Puttanesca Bake treats you to zesty sauce and melted cheese – all while making sure you get your veggies. It’s an easy comfort food remake that will fill you up without filling you out.
Healthy Meal: Spaghetti Squash Puttanesca Bake

Serves: 6
Ingredients:
3-4 pounds spaghetti squash
2 pounds Roma tomatoes, cut into chunks
½ medium onion
4 cloves garlic
¼ cup olive oil, divided
¼ cup black olives, pitted and chopped
1 teaspoon anchovy paste
1 teaspoon dried basil
1 teaspoon dried oregano
1 pinch red pepper flakes
½ cup parmesan cheese
5 ounces mozzarella cheese

Procedure:
- Preheat oven to 375 degrees F.
- While it’s heating, spread the tomatoes, onion, and garlic out evenly on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Place the spaghetti on another and use a knife to poke a few steam holes in the exterior.
- Transfer both into the oven. Cook the tomatoes for 20-30 minutes, stirring occasionally, until they begin to burst and caramelize. Let the spaghetti squash roast for 45-50 minutes.
- When the tomatoes are done, let them cool slightly. Then, combine them in the food processor with the anchovies, olives, basil, oregano, and red pepper flakes.
- Drizzle in the remaining olive oil into the food processor as you pulse to create a chunky sauce. Adjust seasonings to taste. (Note: If you don’t have a food processor, mash the ingredients together by hand.)
- After the squash is finished, remove the it from the oven and wait until it’s cool enough to handle.
- Cut the spaghetti squash in half and scoop out the seeds. Use a fork to create spaghetti-shaped threads from the flesh of the squash.
- Mix the squash with the sauce and parmesan cheese. Transfer the mixture into a casserole dish and top with the mozzarella cheese.
- Place the casserole under the broiler for 3-5 minutes until the cheese is melted and bubbly.
