Now that it’s April, strawberry season has begun. Not only is making an effort to eat seasonably healthier, but it leads to tastier results. Take advantage of the fresh fruit with this Steak Salad with Strawberries. Your taste buds and waistline will thank you for a healthy spring recipe that can be thrown together in just a few minutes.
Healthy Spring Delight: Steak Salad with Strawberries

Ingredients:
For Steak:
2 pounds skirt steak
1 cup balsamic vinegar
½ cup olive oil
2 tablespoons honey
1 teaspoon garlic, minced
1 teaspoon dried rosemary
Salt and pepper
For Salad:
10 ounces romaine lettuce or spinach
6 ounces feta cheese crumbles
1 pint fresh strawberries
1 pint fresh blueberries
1 cup slivered almonds
½ cup poppy seeds
For Dressing:
1/2 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic, minced

Procedure:
- In a small bowl, whisk together the balsamic vinegar, olive oil, honey, garlic, rosemary, and salt and pepper to create the steak marinade.
- Dry off the steak and season it thoroughly with salt and pepper. Then put it in a freezer bag with the marinade. Allow the steak to marinate in the refrigerator for anywhere from 30 minutes to overnight.
- When ready to cook, allow the steak to come to room temperature and heat a lightly-oiled skillet or grill pan on medium-high.
- Place the steak in the skillet and allow it to cook on one side for 5 minutes without fussing with it. Then, flip it an allow it to cook for an additional 3 minutes on the other side to achieve a medium-rare. Though feel free to cook it to taste.
- When you’ve cooked the steak to your liking, allow it to rest for 10 minutes before slicing.
- While the steak rests, toast the almond slivers in a dry pan over medium heat for 2-4 minutes or until they are lightly brown and toasted. Then set aside.
- In a small bowl, vigorously whisk together the balsamic vinegar, olive oil, Dijon mustard, garlic, and salt and pepper to make the salad dressing. Set it aside.
- Prep the ingredients for your salad by washing the lettuce and fruit, hulling and slicing the strawberries, and crumbling the feta cheese.
- When the steak has cooled, slice it thinly and against the grain.
- Assemble the salad by combing the lettuce, strawberries, blueberries, feta, almonds, and poppy seeds in a large bowl. Top with slices of the steak and a light pour of the dressing. Toss everything together.
- Serve immediately with extra dressing on the side.
While this recipe is incredibly easy to assemble as is, incorporating leftovers would make it even easier. Last night’s chicken would be just as tasty as the steak or even some roasted chickpeas for a vegetarian twist.
