Peppery Chicken Shawarma Pita Pocket

Serve: 4
Ingredients
2 tablespoons of Parsley, freshly chopped
½ teaspoon of Salt
½ teaspoon of Red Pepper, crushed
¼ teaspoon of Ground Ginger
¼ teaspoon of Ground Cumin
1/8 teaspoon Ground Coriander
5 tablespoons of Greek Yogurt, original low-fat
2 tablespoons of Lemon Juice, fresh and divided
3 Cloves of Garlic, minced and divided
1 lb. of skinless boneless Chicken Breast halves, thinly sliced
2 tablespoons of Extra-Virgin Olive Oil
1 tablespoon of Tahini
4 (6-in.) Pitas, halved
½ cup of Cucumber, chopped
½ cup of Plum Tomato, chopped
¼ cup of Red Onion, pre-chopped

Directions
1) Combine the first 6 ingredients in a large bowl and stir in 1 tbsp. of yogurt, 1 tbsp. of juice and 2 cloves of garlic. Put in the chicken and toss it around until it is fully coated to your taste.
2) Over a medium heat, heat the oil in a large non-stick skillet. Once the oil has been heated enough add in the chicken mixture to the pan, sauté’, making sure to stir it consistently for 6 minutes or until it is browned and done.
3) While the chicken cooks, combine the remaining ¼ cup of yogurt, the remaining 1 tbsp. of lemon juice, the remaining 1 clove of garlic and tahini in small bowl, stirring the combination well.
4) Spread the 1 ½ tsp. of tahini mixture inside each pita half and dividing the chicken evenly among pita halves. Fill each pita half with 1 tbsp. Of cucumber, 1 tbsp. of tomato and 1 ½ tsp. of onion.
