Summer Lunch: Grape and Arugula Salad

Ingredients
Four bowls of baby arugula
2 cups of red grapes, halved
1 tsp honey
2 tsp fresh thyme, chopped
2 tsp grape seed oil
2 tbsp sunflower seed kernels, toasted
3 tbsp red wine vinegar
1 tsp maple syrup
1/2 tsp ground mustard
1/4 tsp salt
1/4 tsp ground pepper

Directions
- In a glass bowl add red wine vinegar, honey, maple syrup and ground mustard. Slowly poi the oil over and whisk gently so as to mix the ingredients well.
- In another bowl combine the grapes, arugula, toasted sunflower seeds and thyme.
- Now pour the contents of bowl two into bowl one. Mixing gently.
- Carefully pour vinegar over the contents and sprinkle salt and pepper.
- Toss very gently so that the seasoning mixes well.
- Serve in salad dishes.
