Ingredients
2 tablespoons of high quality olive oil and a little more
6 sliced onions
Salt and pepper
½ teaspoon brown sugar
½ cup of a fine dry white wine
1 tablespoon of high quality white wine vinegar
1 tablespoon fresh thyme and/or oregano
Preparation
- Put the olive oil in a saucepan and heat over medium to high heat. Now, add the sliced onions, salt and pepper to taste, the brown sugar and cover the pan. Cook the onions, stirring often, for about 15 minutes until they are soft. Remove the cover and reduce the heat. Continue cooking while stirring occasionally, until the onions become golden brown, for about 12 to 15 minutes.
- Pour in the wine and cook while stirring occasionally, until it evaporates. That will take about 4-5 minutes. Now add the vinegar and the herbs by stirring. Serve warm or at room temperature. Before serving, sprinkle a few drops of extra virgin olive oil and fresh herbs over the onions.
For an alternate serving option as fingerfood, you can arrange a generous portion of the onions on roasted baguette slices or, even easier, on crackers. Also, you can add some cheese of your choice, like cream cheese or brie. To roast the baguette slices, preheat your oven to about 350°F and brush the slices with some olive oil. Then arrange them on a baking sheet and bake until golden, for about 6-8 minutes on each side. After spooning the onions, again sprinkle a few drops of oil and some herbs. Make sure to serve them immediately.
