Summer Grilling – Honey Orange Grilled Chicken Recipe

Juicy chicken, cooked over a slow grill and coated in a sweet sour honey orange glaze… Isn’t it just the right thing to enjoy a lazy summer afternoon over a gabfest session with your closest friends. What better than to set up your summer afternoon and set up a grill and catch up with old friends and enjoy cool lemonades and chilled beers? You will love this twist on your usual grilled chicken recipe!

Summer Grilling –  Honey Orange Grilled Chicken

Honey Orange Glazed Chicken

Preparation Time : 2hrs

Serves: 4 servings

Ingredients

1 whole chicken

For The Marinade

1/4 cup olive oil

1/2 cup fresh orange juice

1 tbsp grated orange zest

1/4 cup mustard sauce

1/4 cup hot sauce

For The Glaze

4 tbsp butter

1/4 cup honey

1/4 cup fresh orange juice

1/4 cup barbecue sauce

1 tbsp grated orange zest

2 tbsp mustard sauce

1/4 tsp allspice

Directions

1. Wash and cut the chicken into 8 to 10 pieces.

2. Mix the olive oil, orange juice, hot sauce, mustard, and orange zest together in a large glass bowl.

3. Put the chicken in the above prepared marinade mix, cover with a plastic wrap and let it sit for at least an hour. An over night in the fridge would be great.

4. Set your grill to medium heat and make sure that your chicken has been brought down to the room temperature.

5. Pick up chicken pieces one by one, and place them on the grill, giving each side about 5 mins.

6. Reduce the heat to low, cover the chicken and allow it to cook. It should take about 20 to 25 mins.

7. Whilst the chicken is cooking, prepare the glaze by melting butter in a saucepan and whisking in honey, orange juice, barbecue sauce, zest, mustard and allspice.
8. Put aside some glaze for dressing.
9. As the chicken is done, brush up the visible upside with some glaze, turn it upside down cook for another two mins and brush the upside again. Flip the chicken and cook again for 2 mins.
10. Remove the chicken from the grill, serve it on a platter and garnish with the kept aside glaze.
