2. Turn onto a floured surface and knead gently 5-6 times. Gently pat dough into a 9-in. circle, about 1/2 in thick. Combine the topping ingredients; sprinkle over dough. Cut into eight wedges.

3. Separate wedges and place 1 in. apart on a greased baking sheet. Bake at 400° for 15-18 minutes or until lightly browned. Remove from pan to a wire rack. Serve warm.

Procedure

In a medium bowl, combine applesauce, canned pumpkin, vegetable oil, eggs, milk, molasses, and vanillas extract. Mix well. In separate bowl combine flour, baking soda, sugar, nutmeg, cinnamon, and baking powder. Gradually add it to the pumpkin mixture and blend well. Stir in pecans and dates. Pour the mixture into two properly greased 9*5 inch loaf pans.

In a small bowl, combine topping ingredients and sprinkle over batter. Bake 350 degrees for 50-55 minutes or until a toothpick inserted comes out clean. Let it cool for 15 minutes before removing from the pans.

This delicious pumpkin bread is great for brunch or as a snack served with whipped cream cheese. It has an incredible texture that remains moist for days. In fact, just like wine, it gets better with age, of course, if it lasts that long! You can also pack them in beautiful fall themed tea towels to give as a gift to your loved ones.

[ad#co-1]

Ingredients

1 cup butter, softened
2 cups sugar
4 large eggs, separated
3 cups all-purpose flour
1 tablespoon baking powder
1/2 cup milk
1/2 cup coconut milk
1 teaspoon vanilla extract
1/4 teaspoon coconut extract
1/8 teaspoon table salt
Vanilla Buttercream
Ambrosia Filling
Garnishes: sweetened flaked coconut, fresh mint, maraschino cherries, orange slices

Procedure

Preheat oven to 350°. Beat butter at medium speed with a heavy-duty electric stand mixer until fluffy; gradually add sugar, beating well. Add egg yolks, 1 at a time, beating just until blended after each addition.

Combine flour and baking powder; stir together milk and coconut milk. Add flour mixture to butter mixture alternately with milk mixture, beginning and ending with flour. Beat at low speed until blended after each addition. Stir in extracts.

Beat egg whites and salt at high speed until stiff peaks form. Stir about one-third egg whites into batter; fold in remaining egg whites. Spoon batter into 3 greased and floured 9-inch round cake pans.

Bake at 350° for 18 to 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans to wire racks, and cool completely.

Place 1 cake layer on a serving platter. Spoon 1/3 cup Vanilla Buttercream into a zip-top plastic bag. Snip 1 corner of bag to make a small hole. Pipe a ring of frosting around cake layer just inside the top edge. Top with half of Ambrosia Filling, and spread to edge of ring. Top with a second cake layer. Repeat procedure with frosting and filling. Top with remaining cake layer, and spread frosting on top and sides of cake.

The whole recipe can serve up to 12 delicious slices of Ambrosia Coconut Cake. This cake recipe should be a perfect dessert for this holiday season.

This Roasted Herb Focaccia Bread recipe is wonderful anytime of year, but I think Autumn is a wonderful time to start getting back in the kitchen after the hot summer we had. 3/4 cup granulated sugar
1/4 cup shortening
3/4 cup milk
1 egg
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup fresh or frozen blueberries
1 cup fresh or frozen (thawed and drained) chopped rhubarb

Vanilla Glaze

Directions

1. Heat oven to 375°F. Grease bottom and side of 9-inch springform pan or 9-inch square pan with shortening or cooking spray.

2. In small bowl, mix 1/2 cup granulated sugar, 1/3 cup flour and the cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly; set aside.

3. In large bowl, mix all coffee cake ingredients except blueberries and rhubarb; beat with spoon 30 seconds. Fold in blueberries and rhubarb. Spread in pan. Sprinkle with topping.

4. Bake 45 to 50 minutes or until toothpick inserted in center of cake (not fruit) comes out clean. Cool 10 minutes. Remove from pan if desired.
