<h2> Ingredients</h2>
<p>1 whole chicken, 3 1/2 to 4 pounds<br />
Kosher salt<br />
Cracked white pepper<br />
1/2 cup diced onion<br />
1/4 cup diced carrot<br />
1/4 cup diced celery<br />
3 cloves garlic, peeled and smashed<br />
3 sprigs fresh thyme<br />
1 lemon, juiced<br />
4 teaspoons cornstarch</p>

<h2>Directions</h2>

<p>1. Rinse the chicken both inside and out under cool running water. Pat dry. Season the chicken liberally both inside and out with salt and pepper. Place in a slow cooker.</p>
<p>2. Scatter the onions, carrots, celery, garlic, thyme, and lemon juice over top of the chicken. Cover the slow cooker and set the temperature to high.</p>
<p>3. Cook for 6 hours, undisturbed.</p>
<p>4. Remove the chicken from the slow cooker, and pour the accumulated juices into a 2-cup heatproof container. Skim the fat from the top and transfer the liquid to a small saucepan.</p>
<p>5. Dissolve the cornstarch in a small bowl with 2 teaspoons of water and whisk to form a slurry. Whisk the slurry into the juices and bring to a boil over high heat.</p>
<p>6. Cook until thickened, season with salt and pepper, and continue to cook an additional 4 to 5 minutes.</p>
<p>7. Cut the chicken into pieces and serve, with the thickened pan juices ladled over the top.</p>

<h2><strong>Ingredients</strong></h2>
<ol>
<li>1 (2 1/2 –pound) of Chicken, cut into 8 pieces</li>
<li>3 Celery Ribs, chopped</li>
<li>1 large Onion, chopped</li>
<li>2 Bay Leaves</li>
<li>2 Chicken Bouillon Cubes</li>
<li>1 teaspoon of House Seasoning, recipe follows:</li>
</ol>
<ul>
<li>                1 cup of Salt</li>
<li>                ¼ cup of Black Pepper</li>
<li>                ¼ cup of Garlic Powder</li>
</ul>
<p>7.   1 (10 ¾-ounce) of can condensed cream of celery or cream of Chicken Soup</p>
<h2><strong>Dumplings:</strong></h2>
<ol>
<li>2 cups of All-Purpose Flour</li>
<li>1 teaspoon of Salt</li>
<li>Ice Water</li>

<h2><strong>Directions</strong></h2>
<h3><strong>For House Seasoning:</strong></h3>
<ol>
<li>Mix the salt, black pepper, and garlic powder together and store in an airtight container for up to 6 months.</li>
</ol>
<h3><strong>For the Chicken:</strong></h3>
<ol>
<li>First, start with the chicken.  Place it, the celery, onion, bay leaves, bouillon, and House Seasoning in a large pot.  Then add 4 quarts of water and bring to a simmer over medium heat.  Simmer the chicken until it is tender and the thigh juices run clear for approximately 40 min.</li>
<li>Remove the chicken from the pot and let it cool.  When the chicken has become cool enough to handle, then remove the skin and separate the meat from the bones. After you have de-boned the chicken put it back into the pot and keep it warm over a low heat.</li>

<p style="text-align: left;"><strong style="font-size: 1.17em;">For the Dumplings:</strong></p>
<ol>
<li>Mix the flour with the salt and mound together in a mixing bowl.  Starting at the center of the mound, drizzle a small amount of ice water over the flour. While using yours fingers, and moving from the center to the sides of the bowl, gradually incorporate about ¾ cups of ice water.  Knead the dough and form it into a ball.</li>
<li>After the ball has been formed, dust a good amount of flour onto a clean work surface.  Roll out the dough (keep in mind it will be firm), working from center to 1/8-inch thick.Then let the dough relax for several minutes.</li>
</ol>
<h3><strong>For the Entire Meal:</strong></h3>
<ol>
<li>Add the cream of celery soup to the pot with the chicken and simmer gently over a medium-low heat.</li>
<li>Cut the dough into 1-inch pieces, pull a piece in half and drop the halves into the simmering soup.  Repeat this process until the entire dough has been used.  Do NOT stir the chicken once the dumplings have been added.</li>
<li>Gently move the pot in a circular motion so the dumplings become submerged and cook evenly.  Cook until the dumplings float and are no longer doughy, which should take about 3-4 minutes.</li>
<li>After the dumplings have achieved the desired look, ladle the chicken, gravy, and dumplings into warms bowls and enjoy!</li>
</ol>
<p>*If the chicken stew is too thin then you can thicken it before adding in the dumplings by mixing together 2 tablespoons of cornstarch and ¼ cup of water.  Whisk the mixture into the stew.</p>
