<h2>Ingredients</h2>
<ul>
<li>1/4 cup of orange juice (fresh)</li>
<li>1 1/2 tbsp of orange zest (grated)</li>
<li>2 tbsp of olive oil</li>
<li>4 tilapia fillets</li>
<li>Red pepper flakes (crushed)</li>
<li>salt and pepper</li>
</ul>
<h2>Salsa</h2>
<ul>
<li>1/4 cup of fresh cilantro (chopped)</li>
<li>1 tbsp  of fresh ginger root (minced)</li>
<li>1 tsp of kosher salt</li>
<li>1 small red onion (finely chopped)</li>
<li>1 mango (peeled and diced)</li>
<li>1 lime (zested and juiced)</li>
<li>1 avocado (peeled and diced)</li>
<li>1 jalapeno pepper (seeded and chopped)</li>
<li>3 tomatoes (peeled and chopped)</li>
</ul>
<h2>Directions</h2>
<ol>
<li>Preheat your oven to 200ᵒC</li>
<li>Mix the orange juice and zest, chili flakes, olive oil, pepper, and salt in a shallow baking dish. Rinse the fillets and dry them. Put them in the dish and turn them so they are evenly coated with the seasoning.</li>
<li>Bake them for 10-12 minutes</li>
<li>As the fillets cook, mix the avocado, mango, tomatoes, onion, ginger, jalapeno, lime juice and zest, salt, and cilantro in a bowl. Stir until blended then set aside until the fish is done.</li>
<li>Serve the fillets on a platter and spread the salsa over them.</li>
</ol>
<p>The best thing about this recipe is that you can add your own ingredients to give it a twist. You can add pineapple to the salsa or add a little honey if you have kids. The honey will reduce the heat from the pepper. You can also remove the jalapeno altogether to make the dish less hot. If you have ample time, leave the fish to marinade for an hour.
