<h2>Ingredients</h2>
<ol>
<li>2 tablespoons of Olive Oil</li>
<li>3 pounds of Smallish Golden Potatoes</li>
<li>1 pinch of Kosher Salt, to taste</li>
<li>1 ½ tablespoons of Cajun Seasoning</li>
<li>2 tablespoons of Flat Leaf Parsley, chopped</li>
</ol>

<h2>Directions</h2>
<ol>
<li>Preheat an aluminum sheet pan in your oven to 350 degrees Fahrenheit.</li>
<li>Take out your potatoes and slice them in diagonal halves then place them into a large bowl.  With the olive oil, drizzle enough coating on your potatoes that each one is fully covered.</li>
<li>Then sprinkle, with a tablespoon and a half, Cajun seasoning.  Toss and spread out the potatoes out onto the hot sheet pan.</li>
<li>Then place the sheet back into the oven for 60 min, being sure to give the potatoes a toss for every 20 min.</li>
<li>Then remove the sheet and sprinkle a little kosher salt and let them slightly cool.  Finally, toss the potatoes with the chopped parsley and serve.</li>
