<p>Makes: 36 cupcakes</p>
<h3>Ingredients</h3>
<p>1 packet of cake mix (red velvet)</p>
<p>1 quart of softened ice cream (blue moon)</p>
<p>5 cups of marshmallow creme</p>
<p>Blue colored sugar</p>
<p>Blue, red, and white sprinkles</p>
<p>3 cups of heavy whipping cream</p>
<h3>Preparation</h3>
<ol>
<li>Follow the instructions on the cake mix packet to mix the batter.</li>
<li>Line a muffin pan with paper cups and fill them halfway with the batter.</li>
<li>Bake them for 11-14 minutes at 350⁰ You can also test them with a toothpick to see if they are baked.</li>
<li>Leave the cupcakes to cool for 10 minutes then move them to a wire rack to cool completely.</li>
<li>Spread ice cream over the cupcakes quickly. If you are slow, it will start melting.</li>
<li>Freeze the cupcakes for about one hour.</li>
<li>Mix the marshmallow crème and heavy whipping cream in a large bowl. Beat until soft peaks form.</li>
<li>Pipe the mixture over the cupcakes. Add the colored sprinkles and sugar on top.</li>
<li>Put the cupcakes in the freezer and leave them for 4 hours.</li>
<li>When they become firm, remove them and serve.</li>

<p>Cornstarch (1/ cup)</p>
<p>4 eggs (extra large), at room temperature</p>
<p>Sugar (2 cups)</p>
<p>Unsalted butter (12 tablespoons or 1-1/2 sticks), at room temperature</p>
<p>Sour cream (3/4 cup), at room temperature</p>
<p>Baking soda (1 teaspoon)</p>
<p>Kosher salt (1/2 teaspoon)</p>
<p>Pure vanilla extract (1/2 teaspoon)</p>
<p>Orange zest (grated; ½ teaspoon)</p>
<p>Lemon zest (grated; ½ teaspoon)</p>
<h3>Cake Filling (for one cake)</h3>
<p>Hulled and sliced fresh strawberries (1 pint)</p>
<p>Sugar (3 tablespoons)</p>
<p>Chilled heavy cream (1 cup or ½ pint)</p>
<p>Pure vanilla extract (1/2 teaspoon)</p>

<h3>Preparation of Cakes</h3>
<ul>
<li>Preheat the oven to 350°F.</li>
<li>Take two 8-inch pans and brush butter on their bottom. Line them with parchment paper. Brush butter and spread flour on the lined pans.</li>
<li>Take a bowl and add butter and sugar in it. Cream them with an electric mixer until the mixture becomes light and fluffy.</li>
<li>Keep the mixing pace at medium and add the eggs one at a time. Now, gradually add sour cream, orange and lemon zests, and vanilla extract. Scrape down the bowl as needed and mix the ingredients with each other well.</li>
<li>Sieve together the flour, baking soda, salt, and cornstarch. Add this mixture slowly to the butter mixture and blend well until it becomes smooth.</li>
<li>Pour the batter into the two pans, dividing evenly. Smooth the top surface, place the pans at the center of the oven, and bake until a toothpick or fork inserted in the middle comes out clean, for approximately 40 to 45 minutes.</li>
<li>Take the cakes out of the oven and let them cool in the pans for half an hour. After that, transfer the cakes to wire racks and let them cool at room temperature. If you want to make the cake sometimes later, just wrap properly and store in the freeze.</li>
</ul>
<h3>Preparation of Filling</h3>
<ul>
<li>Whip the cream, vanilla extract, and sugar in a mixer. Whisk.<br />
Take a long, sharp knife and slice one cake in half. Place the bottom half of the cake on a serving platter with the cut side up. Now, spoon half of the whipped cream and spread evenly over the surface. Scatter strawberry slices.</li>
<li>Put the top half on the bottom half of the cake and spread the remaining whipped cream. Again, scatter strawberry slices to garnish.</li>

<h2>Preparation:</h2>
<ol>
<li>Preheat oven to 375 degrees F.</li>
<li>In a small bowl, mix together 1/2 of the berries, sugar, and sherry, if using. Cover and refrigerate.</li>
<li>Start making the cookie cups. Cream the butter and sugar together until they are light and fluffy. Then, add in the egg and vanilla extract.</li>
<li>Meanwhile, mix together the flour, baking powder, baking soda, and salt in a bowl.</li>
<li>With the mixer on the lowest speed, slowly introduce the dry ingredients into the wet. Let mix until a cohesive dough forms.</li>
<li>Shape the dough into small balls and place each one in a muffin tin. (<strong>Note: </strong>Consider liners for easy clean up.)</li>
<li>Bake the cookies for 12-15 minutes until they are set and golden brown on top.</li>
<li>As soon as the cookies are done, take the end of a small rolling pin and press down in the center of each to create the cup indentation.</li>
<li>While the cookie cups cool, start the custard by cracking the eggs into a small bowl.</li>
<li>Then, in a saucepan, combine milk, sugar, and cornstarch over medium-high heat. Allow the milk to scald, or reach the point just before boiling.  Stir occasionally to keep the cornstarch from clumping.</li>
<li>Once the milk is scalded remove it from the heat and mix two tablespoons of the liquid into the eggs.</li>
<li>Then, pour slowly pour the egg mixture into the milk, whisking constantly so the eggs don’t curdle.</li>
<li>Then, return the milk back to the heat and stir it gently for 2-4 minutes or until it thickens into a custard.</li>
<li>Remove the custard from the heat, mix in the vanilla extract, and allow to cool completely.</li>
<li>Assemble to trifles by filling each cookie cup with custard and  a generous spoonful of the macerated berries. Then, top them with the remaining fresh berries.</li>
</ol>
<p>Trifle isn’t just a Memorial Day dessert. Feel free to play around with the ingredients to suit your needs.
