When you hear the words molten chocolate raspberry cake, odds are it conjures up images of a decadent restaurant experience, wherein you break into the chocolate cake shell and watch all the warm luscious chocolate pour out? Stagetecture is going to let you in on a little secret: there’s a reason why this dessert is a staple on every restaurant menu. It’s super simple to make and only requires ingredients that you probably already have in your pantry. Try this for your Valentine’s Day Dessert, it’s bound to impress that special someone.

Valentine’s Day Dessert: Molten Chocolate Raspberry Cake

Molten Chocolate Raspberry Cake

[ad#co-3]

Ingredients:

1 stick unsalted butter
6 ounces bittersweet chocolate
2 eggs
2 egg yolks
¼ cup sugar
Pinch of salt
2 tablespoons all-purpose flour
4 teaspoons raspberry preserves
Fresh raspberries, for garnish

Molten Chocolate Raspberry Cake

Image Via: Tasty Share

Procedure:

1. Preheat your oven to 450 degrees.
2. Liberally butter four ramekins. Dust the insides with flour and tap the ramekins to get rid of the excess. Put them on a baking sheet.
3. Melt the butter and sugar together in a double-boiler.
4. Meanwhile, in a separate bowl, beat together the eggs, egg yolks, sugar, and salt on high speed. The mixture will become thickened and pale.
5. Whisk the chocolate until it becomes smooth.
6. Gently fold the egg mixture and flour into the chocolate.
7. Fill the ramekins with two-thirds of the batter. Add a teaspoon of the raspberry preserves into the center of each one. Then cover with the remaining batter.
8. Bake the cakes for 12 minutes or until the edges are firm but the center is still soft.
9. Let the cakes stand for one minute before gently running a knife along the edges of the ramekins. Invert each one onto a plate, let stand for ten seconds, and gently unmold them.
10. Serve cakes warm and garnished with fresh raspberries.

The ultimate advantage to this dessert is that it can be made in advance. Spoon the butter into the ramekins, refrigerate them, and bake them off while you’re eating your main course. Just set them out on the counter to bring the batter up to room temperature first. Trust us, this molten chocolate raspberry cake is so good that, not only will it be your Valentine’s Day dessert, it will become your go-to show stopper dish.
