<p>3 ½ cups all purpose flour</p>
<p>¼ cup packaged instant mashed potato flakes</p>
<p>1 package active dry yeast</p>
<p>1 ½ cups milk or water</p>
<p>1/3 cup sugar</p>
<p>¼ cup cooking oil or butter</p>
<p>2 tablespoons finely shredded orange peel</p>
<p>Pinch of salt</p>
<p>Orange glaze</p>
<h3><strong>Orange Glaze Ingredients:</strong></h3>
<p>1 orange</p>
<p>½ teaspoon vanilla</p>
<p>Few drops of almond extract</p>
<p>2 ¼ cups powdered sugar</p>

<h3> <strong>Directions:</strong></h3>
<ol>
<li>In a large bowl, stir together 1 and half cups of flour, the potato flakes, and the yeast; set aside. In a small saucepan, heat and stir milk or water, sugar, butter or cooking oil, orange peel and salt just until warm. Add the flour mixture. Beat with an electric mixer on a low speed for 25-30 seconds   , scraping bowl constantly. Now beat on high speed for 3 minutes. Using a wooden spoon, stir in as much remaining flour as you can.</li>
<li>Turn the dough out onto a lightly floured surface. Knead in enough reaming flour to make dough that is smooth and elastic (3-5 minutes in total). Shape the dough into a ball. Place in a greased bowl and turn once to grease surface. Cover and let it rise in a warm place until doubled (approximately 1 hour).</li>
<li>Punch dough down. Cover and let it rest for 10 minutes. Meanwhile, lightly grease twenty four 2 and half inch muffin cups and set aside.</li>
<li>Divide dough into 24 equal portions; shape into balls. Place one ball into each prepared muffin cup. Cover and let it rise in a warm place until nearly doubled, say for about 30 minutes.</li>
<li>Bake at 350 degrees F for 20-25 minutes or until golden brown. Carefully invert rolls from muffin cups onto the wire rack. Let it cool slightly. Invert again onto a serving platter. Spoon over orange glaze. Serve warm.</li>

<ol>
<li>Pre-heat the oven to 375ºF.</li>
<li>Lightly grease 10 muffin cups.</li>
<li>In a large glass bowl mix 1-1/2 cups flour, baking powder, baking soda and salt.</li>
<li>In another bowl blend together molten butter, sugar, bananas and egg. It would be great if you could lightly beat the egg beforehand.</li>
<li>Mix the flour bowl contents spoon by spoon with the banana bowl contents.</li>
<li>Fill each muffin cup to 2/3rd its capacity.</li>
<li>In a small bowl mix brown sugar, 2 tbsp flour, 1 tbsp butter and cinnamon. Mix gently so that the resultant mixture is coarse. Sprinkle this mixture over the muffins as a topping.</li>
<li>Bake in the preheated oven for about 20 minutes.</li>
<li>Ready to serve.</li>
</ol>
<p>Present her these muffins, delicately wrapped and placed in a classy basket. Your mother is just going to love it! You can replace the All purpose flour with whole wheat flour for a more nutritious take on the recipe. The resultant muffins won’t be as light but very yummy nonetheless. You can also add a teaspoon of vanilla essence in the banana batter for an extra punch of flavors. <li>In a small bowl, beat egg and water together. In a separate bowl, mix flour, cornmeal, baking powder, salt, and sugar. Add egg mixture, oil and water. Stir until smooth. Put batter into prepared muffin cups using approximately ½ cup for each muffin.</li>
<li>Bake in a pre-heated oven for 10-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.</li>

<p>1. Preheat oven to 190 degree Celsius. Grease a 12 hole (1/3 cup capacity) muffin pan. In a large bowl, combine sugar and flours. Make a hole in the center and add butter, egg, milk, and essence. Stir until combined.</p>
<p>2. Fold in caramel bits and banana. Spoon mixture evenly into prepared pans.</p>
<p>3. Bake for 15-20 minutes or until golden and firm to touch. Let it remain in the pan for 5-8 minutes. Transfer to wire to cool. Serve.</p>

They are fancy and so delicious you can’t even imagine. Just go on and make them and see for yourself! This recipe is using almond extract to give the cupcakes a fine almond flavor which works wonderful with the salted caramel. If you don&#8217;t want this flavor though, just omit it and double the amount of vanilla extract.</p>

<h3>For the cupcakes</h3>
<p>¾ cup all-purpose flour<br />
1 teaspoon baking powder<br />
½ cup sugar<br />
¼ cup softened margarine<br />
1 egg<br />
½ teaspoon vanilla extract<br />
½ teaspoon almond extract<br />
¼ cup and 2 tablespoon whole milk</p>
<h3>For the frosting</h3>
<p>¼ cup brown sugar<br />
¼ cup margarine<br />
1 tablespoon light corn syrup<br />
1 ½ teaspoons vanilla extract<br />
¼ cup heavy cream<br />
½ pinch salt<br />
¼ cup and 2 tablespoons salted, softened butter<br />
1 cup sifted confectioners’ sugar</p>

<h3>Directions</h3>
<ol>
<li>To make this delicious cupcakes preheat your oven to about 350 degrees. Line your muffin pan with muffin liners.</li>
<li>Combine flour and baking powder in a bowl. Using a mixer, mix the sugar and ¼ cup margarine until the mixture is creamy and well combined. Add the egg and beat well. Add the aroma almond and the vanilla extract and mix. Now beat in a little at a time the flour mixture and the milk, alternating between these two ingredients.</li>
<li>Fill the liners with the batter, so they are about 2/3 full. Bake the cupcakes for about 20 to 25 minutes, or until an inserted toothpick comes out clean. Let them cool.</li>
<li>Now it’s time to make the caramel. In a saucepan, combine the brown sugar, ¼ cup of margarine, the corn syrup and the vanilla extract over medium heat. Bring it to a boil. Now reduce the heat and let it thicken, which should take about 3 to 4 minutes. Remove the saucepan from the heat and let it cool down so it’s not hot. Now add the cream a little at a time until you have a caramel that resembles the consistency of the honey. Add the salt and stir. Allow to cool. If you want, set aside 1-2 tablespoons of the caramel for decorating.</li>
<li>For the frosting, beat the salted butter together with the confectioners’ sugar with a mixer until you have a fluffy frosting. Add the caramel slowly little by little and mix until you have a smooth frosting.</li>
<li>Frost the cooled cupcakes and drizzle some of the set aside caramel. You can decorate with sea salt or almond slices. Enjoy!</li>

<li>1 1/2 teaspoons baking powder</li>
<li>1/2 teaspoon baking soda</li>
<li>1/2 teaspoon salt</li>
<li>2/3 cup packed brown sugar</li>
<li>2 tablespoons canola oil</li>
<li>2 teaspoons vanilla extract</li>
<li>1 (8-ounce) carton plain fat-free yogurt</li>
<li>1 large egg</li>
<li>1 1/2 cups finely diced peeled pear</li>
<li>Cooking spray</li>
<li>3 tablespoons turbinado sugar</li>

<h2 style="text-align: justify;">Procedure</h2>
<ol style="text-align: justify;">
<li>Preheat oven to 400°.</li>
<li>Place walnuts in a food processor; process until finely ground.</li>
<li>Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients (through salt) in a medium bowl; stir well with a whisk. Stir in ground walnuts. Make a well in center of mixture.</li>
<li>Combine brown sugar and the next 4 ingredients (through egg) in a small bowl; add to the flour mixture, stirring just until moist. Fold in diced pear.</li>
<li>Spoon batter into 15 muffin cups coated with cooking spray; sprinkle batter with turbinado sugar. Bake at 400° for 20 minutes or until muffins spring back when touched lightly in center. Remove from pans immediately. Place on a wire rack. Serve either warm or at room temperature.</li>
</ol>
<p style="text-align: justify;">You should be able to yield at least 15 muffins using the whole ingredients. The taste is truly rich and the texture is perfect for a muffin. <ol style="text-align: justify;">
<li>Preheat the broiler. Whisk the eggs, cream, 1/2 teaspoon salt, and pepper in a medium bowl to blend. Set aside.</li>
<li>Heat the oil and butter in a 9 1/2-inch-diameter nonstick ovenproof skillet over medium heat.</li>
<li>Add the asparagus and sauté until crisp-tender, about 2 minutes. Raise the heat to medium-high.</li>
<li>Add the tomato and a pinch of salt and sauté 2 minutes longer.</li>
<li>Pour the egg mixture over the asparagus mixture and cook for a few minutes until the eggs start to set.</li>
<li>Sprinkle with cheese. Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes. Place the skillet under the broiler.</li>
<li>Broil until the top is set and golden brown on top, about 5 minutes. Let the frittata stand 2 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate.</li>
</ol>
<p style="text-align: justify;">Feel free to adjust the taste according to your preference. For instance, you can add pepper and spice if you want it hot. You can also use cheese instead of Fontina, if you like. The whole recipe can serve up to six persons.</p>

<p><strong>Black Bean Mash</strong></p>
<p><strong></strong>2 cups cooked black beans<br />
1/4 to 1/2 cup light sour cream<br />
2 green onions, white and green parts, chopped<br />
1 teaspoon ground cumin<br />
1/2 teaspoon sea salt<br />
1 teaspoon freshly ground pepper<br />
4 slices cooked bacon, chopped (optional)</p>
<p>8 small corn tortillas<br />
Extra-virgin olive oil, for brushing<br />
1 tablespoon coconut oil or unsalted butter<br />
8 eggs<br />
1 cup shredded white Cheddar cheese<br />
2 avocados, peeled and thinly sliced<br />
1/3 cup chopped fresh cilantro<br />
1 lime, in wedges<br />
Hot sauce, for serving (optional)</p>
<h3><strong>Directions</strong></h3>
<p>1. Whether cooking the beans from scratch or using canned, drain the beans and add them to a saucepan over low heat and warm through. Add about 1/4 cup tepid water, 1/4 cup of the sour cream, the green onions, cumin, salt, and pepper and mash with a potato masher or a large fork until coarsely mashed but not entirely smooth. Stir in the bacon. Taste for salt and pepper, add the remaining sour cream if you&#8217;d like the beans to be creamier, then turn off the heat and keep covered until needed.</p>
<p>2. Preheat the oven to 400 degrees F. Brush the tops of the tortillas with a bit of olive oil and lay them on a rimmed baking sheet (it&#8217;s fine if they overlap). Bake until just lightly browned, 6 to 8 minutes. Remove from the oven and set aside.</p>
<p>3. Heat a large frying pan with the coconut oil over medium heat. Working in batches as necessary, gently break the eggs in the pan and cook sunny-side up or to your desired doneness, covering the pan if you like your yolks more cooked through. Build a tostada by topping a tortilla with about 1/4 cup of the bean mash, 1 egg, and an eighth of the cheese, avocado slices, and cilantro. Repeat with the remaining ingredients. Serve garnished with a slice of lime and hot sauce to taste.</p>

<h2><strong>Ingredients</strong></h2>
<p>12 eggs</p>
<p>2/3 cup milk</p>
<p>1/2 teaspoon salt</p>
<p>2 tablespoons butter</p>
<p>1 pound bulk pork sausage</p>
<p>2 tablespoons minced garlic</p>
<p>1/2 red onion, diced</p>
<p>1 tomato, diced</p>
<p>1/4 cup chopped fresh cilantro</p>
<p>1 (3.5 ounce) can diced jalapenos (optional)</p>
<p>1 (1 ounce) package taco seasoning</p>
<p>1 1/2 cups shredded Cheddar cheese</p>
<p>20 (6 inch) flour tortillas</p>

<h2><strong>Directions</strong></h2>
<p>1. Whisk together the eggs, milk, and salt in a large bowl. Heat butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until eggs are completely set, about 5 minutes. Chop the cooked eggs and place in a large bowl. Set aside.</p>
<p>2. Heat a large skillet over medium heat and stir in the sausage and garlic. Cook and stir for 5 minutes, then add the onion. Continue cooking and stirring until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Combine the sausage with the eggs, tomato, cilantro, jalapeno, and taco seasoning. Allow mixture to cool to room temperature, then stir in the Cheddar cheese.</p>
<p>3. Place a tortilla onto your work surface, then spoon some of the filling halfway between the bottom edge and the center of the tortilla. Flatten the filling into rectangle shape with the back of a spoon. Fold the bottom of the tortilla snugly over the filling, then fold in the left and right edges. Roll the burrito up to the top edge, forming a tight cylinder. Repeat with the remaining ingredients.</p>
<p>4. Tightly wrap individual burritos with plastic wrap and freeze until ready to serve. Heat in the microwave until hot, 3 to 4 minutes, before serving.</p>
