<h2><strong>Ingredients</strong></h2>
<p>3 pound whole chicken</p>
<p>1 tablespoon olive oil</p>
<p>Pinch of salt</p>
<p>Pinch of ground black pepper</p>
<p>¼ teaspoon oregano, dried</p>
<p>¼ teaspoon basil, dried</p>
<p>¼ teaspoon paprika</p>
<p>Pinch of cayenne pepper</p>

<h2 style="text-align: left;"><strong>Procedure</strong></h2>
<ol>
<li>Preheat the oven to 230 degrees Celsius or 450 degrees Fahrenheit</li>
<li>Thoroughly rinse the chicken under cold running water. Remove all fat, and pat dry using paper towels.</li>
<li>In a small baking pan, put chicken and brush with olive oil. Mix together salt, oregano, pepper, paprika, basil, and cayenne pepper. Sprinkle the mixture over chicken. Alternatively, you can opt to rub the spices underneath the skin. You can also increase the suggested amounts according to your taste and liking.</li>
<li>In the pre-heated oven, <a title="Herb Roasted Chicken and Broccoli Pesto Tortellini Recipe" href="https://stagetecture.com/2014/08/herb-roasted-chicken-broccoli-pesto-tortellini-recipe/">roast chicken</a> for 15-20 minutes. Lower the temperature to 205 degrees Celsius or 400 degrees Fahrenheit and continue roasting for approximately 35-40 minutes more.  Let it cool for 10-15 minutes before serving. (Optional- After the first 20 minutes of roasting add some diced root vegetable like carrots and beets to the pan. This will ensure that your entire meal is ready with the chicken.</li>

<h2> Ingredients</h2>
<p>1 whole chicken, 3 1/2 to 4 pounds<br />
Kosher salt<br />
Cracked white pepper<br />
1/2 cup diced onion<br />
1/4 cup diced carrot<br />
1/4 cup diced celery<br />
3 cloves garlic, peeled and smashed<br />
3 sprigs fresh thyme<br />
1 lemon, juiced<br />
4 teaspoons cornstarch</p>

<h2>Directions</h2>

<p>1. Rinse the chicken both inside and out under cool running water. Pat dry. Season the chicken liberally both inside and out with salt and pepper. Place in a slow cooker.</p>
<p>2. Scatter the onions, carrots, celery, garlic, thyme, and lemon juice over top of the chicken. Cover the slow cooker and set the temperature to high.</p>
<p>3. Cook for 6 hours, undisturbed.</p>
<p>4. Remove the chicken from the slow cooker, and pour the accumulated juices into a 2-cup heatproof container. Skim the fat from the top and transfer the liquid to a small saucepan.</p>
<p>5. Dissolve the cornstarch in a small bowl with 2 teaspoons of water and whisk to form a slurry. Whisk the slurry into the juices and bring to a boil over high heat.</p>
<p>6. Cook until thickened, season with salt and pepper, and continue to cook an additional 4 to 5 minutes.</p>
<p>7. Cut the chicken into pieces and serve, with the thickened pan juices ladled over the top.</p>
