<p style="text-align: left;">For those looking to have a truly traditional Thanksgiving, succotash is a must. The dish has Native American roots and is thought to have been served during the first <a href="https://stagetecture.com/?s=thanksgiving#sthash.0g2PCgqX.dpbs" target="_blank">Thanksgiving celebrations</a> of the colonies. Since the only steadfast requirements for a succotash  are  vegetable medley that uses lima beans and some type of lard, this side can easily be customized to a variety of tastes. Best of all, it&#8217;s a delicious way to ensure that you don&#8217;t skimp on the veggies during the holidays.</p>

<h2 style="text-align: left;"><b>Ingredients:</b></h2>
<p style="text-align: left;">4 slices bacon</p>
<p style="text-align: left;">1 medium onion</p>
<p style="text-align: left;">1 tablespoon minced garlic</p>
<p style="text-align: left;">8 ounces frozen corn kernels</p>
<p style="text-align: left;">8 ounces frozen lima beans</p>
<p style="text-align: left;">1 bell pepper</p>
<p style="text-align: left;">6 ounces cherry tomatoes</p>
<p style="text-align: left;">½ cup chicken or vegetable stock</p>
<p style="text-align: left;">½ cup arugula leaves</p>
<p style="text-align: left;">2 tablespoons fresh sage</p>
<h2 style="text-align: left;"><b>Procedure:</b></h2>
<ol style="text-align: left;">
<li>Prep your ingredients first. Slice the bacon into bite-sized pieces. Mince the garlic. Chop the onion and bell pepper. Halve the cherry tomatoes and julienne the sage.</li>
<li>Fry the bacon in the skillet until it becomes crispy. Set aside.</li>
<li>Reserve a tablespoon of the bacon grease and use it to sauté the onions until they are translucent. Stir in the garlic until it becomes fragrant.</li>
<li>Add the bacon back into the pot along with the corn, lima beans, bell pepper, and cherry tomatoes. Season them with salt and pepper and cover with stock.</li>
<li>Cook the vegetables for about 10 minutes or until they are tender.</li>
<li>Turn off the heat and stir in the sage.</li>
<li>When the vegetables come to room temperature, toss with the arugula.</li>
</ol>

<h3><b>Ingredients:</b></h3>
<p>1 large head of cauliflower</p>
<p>1 large head of broccoli</p>
<p>1 large onion</p>
<p>1 ½ cups light cream</p>
<p>1 egg yolk</p>
<p>2 teaspoons salt</p>
<p>½ teaspoon black pepper</p>
<p>½ teaspoon cayenne pepper</p>
<p>¼ teaspoon ground nutmeg</p>
<p>1 ½ cups sharp cheddar cheese</p>
<p>½ cup gruyere cheese</p>
<p>½ breadcrumbs (optional)</p>
<h3><b>Procedure:</b></h3>
<ol>
<li>Preheat the oven to 375 degrees.</li>
<li>Prep your ingredients. Chop the cauliflower and broccoli into bite-sized florets. Finely chop the onion. Grate all the cheese.</li>
<li>Place the florets into a large, microwave safe bowl and cover with about a ½ cup of water. Microwave the vegetables for 7-10 minutes or until they are fork tender. When done, drain the florets and set aside.</li>
<li>While the vegetables cook, heat a tablespoon of butter in a skillet and sauté the onions until they have become lightly browned. Reserve them for later.</li>
<li>Ensure the skillet is on medium heat. Whisk together the cream and egg yolk, stirring constantly until the mixture is thick enough to coat the back of the spoon and has become glossy.</li>
<li>Add in seasonings and half the cheese. Stir until the cheese has melted and a sauce has formed.</li>
<li>Toss vegetables and sauce together until they are thoroughly coated.</li>
<li>Transfer the vegetable mixture into a greased 13&#215;9 baking pan. Cover with the remaining cheese and top with breadcrumbs, if using.</li>
<li>Bake it for 30 minutes.  Afterwards, if you are using breadcrumbs, broil on high for an additional 5 minutes to brown the top.</li>
</ol>
<p>This Veggie Macaroni &amp; Cheese<b> </b>recipe serves 10-12, depending on portion size. While there’s certainly nothing wrong with a bit of indulgence around the holidays, these veggie-packed recipes will allow you to do so without all the extra guilt.</p>
