Super Bowl Dessert Ingredients:

For Cookies:

2 cups flour

½ teaspoon baking powder

¼ teaspoon salt

1 stick room temperature unsalted butter

1 cup granulated sugar

1 tablespoon milk or cream

1 large egg

1 teaspoon vanilla extract

For Football Themed Cookies Icing:

2 cups confectioners’ sugar

1 tablespoon milk, plus more if needed for consistency

1 tablespoon light corn syrup

½ teaspoon vanilla extract

Brown food coloring

Football Themed Desserts Directions:

Use your mixer to cream together the butter and sugar together. When thoroughly combined, add in the egg, milk, and vanilla extract.

Meanwhile, mix together the flour, baking powder, and salt in a large bowl.

Turn the mixer to the lowest setting and gradually add the dry ingredients into the wet ingredients. Continue mixing until a cohesive dough forms.

Flour a work surface and flatten the dough into a disk. Wrap the dough tightly in plastic wrap and transfer it to the freezer to set for at least half an hour.

Preheat the oven to 325 degrees.

Flour two sheets of parchment paper. Unwrap the dough and roll it into a 1/8 inch thick sheet between the two pieces of parchment paper, dusting as needed to keep the dough from sticking.

Remove the top sheet of parchment paper and use a football-shaped cookie cutter to cut out shapes. Gather the dough scraps into a ball, roll it into another sheet, and continue cutting out shapes until all the dough has been used.

Bake the cookies for 10-15 minutes, rotating them halfway through.

Allow them to cool completely on a wire rack before decorating.

While the cookies cool, start the icing by thoroughly sifting the confectioners’ sugar.

Mix the sifted sugar with the milk until a spreadable consistency is achieved.

Beat the corn syrup and almond extract into the icing until it becomes smooth and glossy.

Separate 1/3 of the icing into a different bowl. Stir brown food coloring into the larger portion until it reaches the shade of a football.

Leave the other icing white. Cover the bowl with a moist paper towel to make sure the icing does not dry out.

When the cookies have cooled completely, use the back of a spoon to spread a dollop of brown icing across each one.

Let the cookies stand for at least 20 minutes to allow the brown icing to harden.

Put the white icing into a pastry bag with a 2” tip. (Note: If you don’t have a pastry bag, you can use a thumbtack to work a small hole into the corner of a sandwich baggie.)

To decorate each end of the cookie: Pipe two lines of white icing to create a thick, curved C-shape. Fill in the space between the two lines with more icing.

To decorate the center of each cookie: Pipe a single vertical line. Then, pipe several smaller horizontal lines across it in order to create the laces.

Allow the white icing at least 10 minutes to set before serving.

This recipe will make around 30 football-shaped cookies. But when planning for your party, aim for two cookies per person. Feel free to play around with cookie shapes, food coloring, and piping designs in order to make this recipe work for you. While, as it stands, this is a super bowl dessert, it could easily be made into a go-to recipe for every special day.

Entry #3200, January 16, 2014

This winter there are several reasons to celebrate with food and the Superbowl is one of the best ones for finger foods. Even if you’re not a football fan, you have at least one reason to look forward to Superbowl Sunday: the food. There’s nothing better than a chance to indulge in your favorite pub snacks. If you’re in need of a game day dish, look no further than these ultimate slow cooker pulled pork sliders. Bathed in a sweet and spicy barbecue sauce and topped with creamy coleslaw, these pulled pork sliders will be gone before kickoff.

Ultimate Slow Cooker Meal: Pulled Pork Sliders

Slow Cooker Pulled Pork Slider Recipe

Image via: Better Homes and Gardens

Ingredients:

1 4-6 pound pork butt

½ small onion

1 tablespoon minced garlic

1 6 ounce can of tomato paste

1 12 ounce can of beer

¼ cup cider vinegar

3 tablespoons brown sugar

2 tablespoons Dijon mustard

2 teaspoons Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon lemon juice

¼ teaspoon red pepper flakes

Salt and pepper

24 Hawaiian slider rolls

Coleslaw, for topping

Pickle slices, for topping

Slow Cooker Pulled Pork Sliders

Image Via: Top Appetizer Recipes

Procedure:

Chop the onion and garlic very finely.

Sauté the onion and garlic over low heat until the onion is translucent and the garlic becomes fragrant.

Add in the tomato paste. Use the beer to thin out the paste until it becomes the consistency of ketchup.

Stir in the cider vinegar, brown sugar, Dijon mustard, Worcestershire sauce, paprika, lemon juice, and red pepper flakes.

Cover the mixture and allow it to simmer for 10-15 minutes, until it thickens into the consistency of a barbeque sauce. Adjust seasonings to taste. (Note: If stored in an airtight container and refrigerated, this sauce will last for up to a week. Feel free to make it in advance.)

When ready to make the sliders, dry the pork butt thoroughly with paper towels and season it generously with salt and pepper.

Put the pork into a slow cooker and top it with the barbecue sauce. Cook on high for 5 hours or on low for 8 hours.

Before serving, use two forks to shred the pork into pieces.

Pile the pork high onto the Hawaiian slider rolls. Garnish with a dollop of coleslaw and two pickle slices.

The rule of thumb for finger foods like sliders is to make sure you prepare enough for each guest to have three pieces. This recipe will comfortably serve 7-8 people, but it could easily be doubled to feed a crowd. In fact, err on the side of caution with this one. These slow cooker pulled pork sliders are so delicious that your guests will be begging for more.

4 ready-to-serve pizza crusts, 6 inches in diameter

1 1/2 cups shredded Cheddar cheese (6 ounces)

Image via: Real Mom Kitchen

Directions

1. Heat oven to 400°F. Spray 10-inch nonstick skillet with cooking spray; heat over medium heat. Cook sausage in skillet about 3 minutes, stirring occasionally, until brown; drain. Remove sausage from skillet; set aside.

2. Pour eggs into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Do not stir. Cook 4 to 5 minutes or until eggs are thickened throughout but still moist.

3. Place pizza crusts on ungreased cookie sheets. Sprinkle with half of the cheese. Top each with eggs and sausage. Sprinkle with remaining cheese. Bake 10 to 12 minutes or until cheese is melted.

Unroll dough on a lightly floured surface. Gently stretch dough into a 14- x 12-inch rectangle. Spoon pork mixture onto dough, leaving a 1 1/2-inch border. Lightly brush edges of dough with egg, and roll up, starting at 1 long side and ending seam side down.

Carefully place dough, seam side down, on a baking sheet coated with cooking spray. Bring ends of roll together to form a ring, pinching edges together to seal. Lightly brush top and sides of dough with egg. Sprinkle with cumin seeds, if desired.

Bake at 375° for 18 to 22 minutes or until golden brown. Serve warm with salsa. Garnish, if desired.

This should serve at least eight persons. You will be amazed to see how these pork empanadas become the party favorite.

1 (4-oz.) can chopped green chiles

1 plum tomato, seeded and diced

1/4 cup chopped fresh cilantro

Bacon wrapped potatoes

Image via: Pinterest

Directions

Place a lightly greased wire rack in aluminum foil-lined 15- x 10-inch jellyroll pan.

Preheat oven to 425°. Sprinkle potato wedges with salt. Wrap each with 1 bacon slice. Arrange potato wedges in a single layer in prepared pan. Sprinkle with pepper.

Bake at 425° for 40 to 45 minutes or until bacon is crisp and browned.

Meanwhile, sauté onion in hot oil in a small nonstick skillet over medium-high heat 5 minutes or until tender. Add garlic and sauté 1 minute. Remove from heat.

Combine queso blanco, next 3 ingredients, and onion mixture in a large microwave-safe glass bowl. Microwave at HIGH 2 1/2 minutes; stir and microwave 2 1/2 more minutes or until cheese is melted and mixture is smooth, stirring at 1-minute intervals.

Stir diced tomato and cilantro into queso blanco mixture. Serve dip with potato wedges.

The whole process will take approximately an hour and thirty minutes. But after you take a bite, you’ll definitely say – it’s worth the wait!
