Valentines Dinner: Lobster Colorado Recipe

Ingredients

4 servings

Beef tenderloin filets (4 pieces or 8 ounces)

Cleaned and chopped lobster tail (8 ounces)

Bacon (4 slices)

Butter (1/2 cup; divided)

Garlic powder (1/2 teaspoon)

Old Bay seasoning (1 teaspoon)

Pepper

Salt

Preparation

1. Set the oven to Broil at 260°C or 500°F.
2. Sprinkle garlic powder, pepper, and salt all over the tenderloins.
3. Now, wrap each of the fillets with bacon. Use toothpicks or kitchen twine to tie the bacon around the meat. Put them on the broiling pan and broil each side for medium rare for nearly 8 to 10 minutes.
4. Take a medium frying pan and melt 1/4 cup of butter with ½ teaspoon seasoning on it over medium heat. Add the lobster meat and keep cooking until done.
5. Spread the cooked lobster meat over the tenderloins. Put them again to the broiler until the cooked lobster becomes brown in color. Stop the heat and set aside.
6. Take a small saucepan and melt the remaining 1/4 cup of butter at medium-high heat. Keep the heat on until the butter takes the color of a hazelnut.
7. Spread the browned butter over the steaks and sprinkle some seasoning.
8. Serve!

Tips

1. If you do not have the Old Bay seasoning, just use a combo of spices and the result will be equally great.
2. If you want your lobster moist, do not brown them too much, cook until almost done, and then put the steaks on top of them. Adding a splash of white wine will also help.

Everyone knows that Valentines Day is the perfect excuse for an extravagant dinner, but take it one step further by getting the kids involved. During the day, while you’re busy cooking, set them up with construction paper and markers. Have them write down a thoughtful gift for each member of the family. These shouldn’t be material gifts, rather actions that will show how much they appreciate each other. It could be something as simple as cleaning their rooms without being asked or promising to include their little brother when playing with the other kids in the neighborhood. You do the same. Then, after you enjoy your meal, present your gifts to each other by reading them aloud.

Makes Valentine Chocolate Pops:

Chocolate heart-shaped lollipops are a fun, edible take on the traditional valentine. All you need is some red baking chocolate, heart-shaped molds, and lollipop sticks. All of which can be found at your local dollar store or drug store. Melt portions of the baking chocolate in the microwave then pour it into the molds. Have the kids gently place a lollipop stick in the middle of the mold and, if desired, decorate each one with a few sprinkles. Pop the molds into the freezer for about half an hour before enjoying a tasty treat. Or, tie them up with wrappers and ribbon to give to friends and family.

Make A Valentine Box:

For many children, Valentine’s Day means a party in school, during which time everyone exchanges valentines with each other. Give your children a place to keep their cards by decorating a valentine box. To do this, find an empty shoebox and cut a slit into the center of the lid. Cover the bottom and top of the box completely with white construction paper. Then, have the kids trace and cut out hearts with different colored construction paper. On each one, have them write down a different thing that they are thankful for. Decorate the shoebox by covering with the hearts, lace, and glitter. Then, use it to hold your Valentines Day cards year after year.

Have a Poetry Treasure Hunt:

Don’t be afraid to incorporate a little education into the day’s festivities, particularly if you are a homeschooling family. Create a poetry treasure hunt for your kids that will be both fun and informative. Begin by printing an age-appropriate valentine poem from the internet and put it up into separate stanzas. Then, hide each stanza in different locations throughout the house. Draw your kids a map to follow. As they find each piece, take the opportunity to discuss the meaning of the poem as well as its elements – theme, diction, pentameter, etc. At the end of the hunt, leave them a small prize to enjoy as you discuss the poem as a whole. 

Valentines Day doesn’t have to be all about flowers, dinners, and fancy pieces of jewelry. Especially when your children are involved, it can be an educational opportunity where good values are emphasized.
