Hot Chicken Saltimbocca Panini

Ingredients
Boneless Chicken Breast (1lb) or Meijer Chicken Breast Splits (Family Pack)
Fresh Mozzarella, sliced
Fresh Basil Leaves
Proscuittto, thinly sliced
3 tablespoons of Mayonnaise
A pinch of Dried Basil
½ of a Lemon use for the juice
Pinch of Salt and Pepper
Granulated Garlic
Butter or Olive Oil

Directions
- If you have a Panini press or perhaps a small grill like the George Foreman, if either are the case then go ahead and plug them in. And you are going to want to begin with making the mayonnaise sauce first.
- Take the lemon juice, the 3 tablespoons of mayonnaise, salt, pepper, dried basil, and granulated garlic and combine them altogether in a bowl and giving them a quick stir.
- Next for your winter lunch, you are going to want cut the bread into ½ slices and the newly formed mayonnaise and smear it onto each slices. Then take the chicken and place them on the portion of the bread slice that you would like to use as the base of the sandwich.
- Then place a layer of the mozzarella on top of the chicken, next a layer of basil leaves, then a layer of prosciutto, add a layer of red peppers and top it all off with the other half of the sandwich. Lastly, you can brush the top of the sandwich with either butter or Olive Oil then place the entire Panini onto the Panini press or grill and close the top.
- Let the Panini cook for about 5-10 minutes. Flip the sandwich if you need to, when it’s done take it out and enjoy!
