The upcoming holiday season can be summarized in one word-Extravaganza! Extravaganza in terms of celebrations, decorations, festivities, food etc. Talking about food, especially breakfast, it being the most important meal of the day; one does expect, holiday breakfast meals to come with an extra spike of flavors and be ready in no time. After all, there is so much more to do than cooking. So here is sharing with you a delectable breakfast recipe that everyone in the family will just love. And what you are likely to love is how quickly you can toss it up.
Holiday Breakfast: Spinach Corn Quesadillas

Ingredients
4 cups fresh spinach, washed and chopped (baby spinach is better)
2 medium onions, chopped fine
1 cup sweet corn, washed and boiled
1/2 tsp garlic powder
1 tsp ground cumin (freshly ground preferable)
1 cup shredded cheese
(You can use Mexican cheese blend, Ricotta cheese or simple cream cheese. Flavored cheese will add to the taste, if you like complex flavors )
1/4 cup sour cream, fat-free
2 tsp pepper
salt to taste
6 flour tortillas (6” ones)
1 tbsp olive oil

Directions
- Heat a large non stick pan. Add olive oil.
- To the heated pan, add spinach, onions, garlic powder, cumin powder and black pepper.
- Cook till the spinach shrinks and becomes soft and cooked.
- Fold in the boiled corn next.
- Remove from heat and mix in the shredded cheese.
- Take the tortillas out, one by one. Spread them on a flat surface.
- Spread the cheese and spinach corn mix on one half of each tortilla, sprinkle a little salt and fold the other half on it.
- On a non stick pan, brush a little olive oil. Cook each mixture filled tortilla over medium heat for about 1 to 2 minutes on each side. They should turn to light golden brown.
- Cut each of the cooked quesadilla into half and serve with sour cream.
