Mother’s Day Breakfast: Baked Oatmeal with Apples Recipe

Mother’s Day is fast approaching and you want to give your mom a really nice mother’s day this year? How about surprising her with breakfast in bed? Try this baked oatmeal recipe with apples. Quick, delicious and nutritious at the same time, this Mother’s Day breakfast can be prepared with ease. After all, great tasting foods don’t have to be complicated!

Mother’s Day Breakfast: Baked Oatmeal with Apples

Try this twist on traditional oatmeal for Mom this Mother’s Day

Total Time: 35-40 minutes

Yields: 6 servings

Ingredients

3 cups regular or rolled oats

½ cup brown sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

Pinch of ground nutmeg

2 eggs

1 medium chopped apple

2 cups milk, fat free

1/3 cup raisins

1/3 cup walnuts, chopped

Procedure

1. In a medium bowl, combine oats, brown sugar, baking powder, cinnamon, salt, and nutmeg. Whisk eggs and milk. Stir the mixture into dry ingredients until completely blended. Let the mixture stand for 5-7 minutes. Stir in raisins, walnuts, and apples.

2. Transfer to an 8 inch baking dish. Make sure to coat the dish properly with cooking oil. Bake, uncovered at 350 degrees for 30-35 minutes or until edges are slightly brown. Serve with milk if desired.

3. While it’s almost impossible to screw up mother’s day breakfast because even if you would bring her a burnt toast, we bet she would love it, we recommend give it a try at least once before the big day, especially if you are new to cooking.
