Mother’s Day Brunch: Ham and Cheese Quick Bread

Ingredients
Non-stick Cooking Spray
2 cups of All-Purpose Flour
1 ¼ teaspoons of Baking Powder
2 ¼ teaspoons of Dry Mustard
¾ teaspoons of Baking Soda
A pinch of Cayenne Pepper
¾ cups of Milk
- Additional, 1 tablespoon of Milk
1/3 cup of Vegetable Oil
3 Eggs
2 tablespoons of Honey
One 6-ounce piece of Deli Ham (Finely chopped for about 1 ¼ cups)
½ cup of finely diced Havarti or Gruyere Cheese (about 2 ounces)
1 cup of Shredded Gruyere Cheese, lightly packed ( about 1 ¼ cups)
2 Scallions, chopped

- Directions
- First you are going to want to preheat your oven to 350 degrees F. Then, with the non-stick cooking spray, lightly coat a 9 by 5 by 3 inch metal loaf pan then place it aside.
- Next for your mother’s day brunch, take a medium sized bowl and whisk together the flour, baking powder, baking soda, ¾ teaspoon dry mustard, kosher salt and cayenne until they become a combined mixture. Then take a large bowl and whisk together ¾ cup of milk, the oil, 1 tablespoon of honey and the eggs. Combine the mixture until it becomes smooth.
- Then stir in the dry ingredients until the two mixtures become just combined, after the dry and wet mixtures are combined fold in the ham, ¾ cups of shredded cheese, the diced cheese and the scallions.
- Third, pour the batter into the non-stick prepared loaf pan and sprinkle the top of with the remaining ¼ cup of shredded cheese. Then stick the loaf pan into the oven and bake until the combination inside has well rise, golden brown and stick a tooth pick in it to see if it comes out clean, if so then it is ready.
- Let the pan cool for 10 minutes, while the pan is cooling take out a microwave safe bowl and stir together 1 tablespoon of honey and milk and the remaining 1 ½ teaspoons of dry mustard until this mixture is smoothed out. Then place it in the microwave for about 20-30 seconds until it is hot and even bubbling. Turn the loaf out on a wire rack and generously brush with the warm glaze, let that cool and serve.
