Buche de Noel – also known as Yule Log – is a traditional French Christmas Dessert. You can find a lot of different recipes out there, but all have one thing in common: the result is a rolled cake that resembles a tree log. The traditional decoration of a Yule Log – Buche de Noel is powdered sugar to look like snow and meringue mushrooms. Here is one great recipe that uses an airy chocolate cake, delicious cream cheese filling and a wonderful chocolate cream cheese frosting.

4 ½ cups powdered sugar

½ teaspoon almond extract (optional)

1/3 cup unsweetened cocoa powder

Yule Log Directions:

First to make your yule log, you need to preheat the oven to 375 degrees F. Next, prepare a 15x10x1-inch pan by greasing it and lining it with waxed paper, which you also need to grease generously.

In a bowl, combine cornstarch, flour and cocoa powder. Then use a fine-mesh sieve and stir these ingredients through it into a medium bowl. Add baking soda and salt.

Take a mixing bowl and beat the eggs, yolks and vanilla using an electric mixer for about 5 minutes on high, until you get a thick mixture with a color of a lemon. Little by little add the granulated sugar continuing to beat the mixture on high for 2-3 minutes, until all the sugar is almost dissolved. Set the electric mixer aside and take a rubber spatula, which should be a large one. Sprinkle one third of the flour mixture over the egg mixture and fold in the flour mixture as gently as you can. Continue with the next one third flour mixture as before, and fold it in, just until its combined. Finish in the same manner with the remaining flour mixture.

Slowly pour the batter in the baking pan and spread it evenly. Bake the cake for about 12 minutes or until it springs back when touched. Take care to not over-bake it, since it needs to keep its elasticity so you can roll it later. While the cake is baking, prepare a clean towel by spreading it out and sprinkling generously powdered sugar on it.

When the cake is baked, remove it from the oven and let it cool in the pan on a wire rack for 2-3 minutes. Now, use a small knife to loosen the edges if necessary and turn the cake out onto the towel. Remove the waxed paper with care.

Now it’s crucial to act fast, but with care. Don’t let the cake get cold or you won’t be able to roll it. So, while it’s still warm, start from a short side of the cake and roll it up together with the towel into a spiral. Let the cake with the towel cool on a wire rack. Watch this video to learn how to roll a cake. Click here to watch the video.

While the cake is cooling, move on to prepare the filling/frosting. To do that, simply take a large bowl and use an electric beater on medium to beat the cream cheese, add the butter and the vanilla fluffy. Little by little add the powdered sugar. Take another bowl and pour in half of the cream cheese mixture; this will be the filling. Add the cocoa powder to the remaining cream cheese mixture and beat it in; this will be the frosting.

Once the cake has cooled down, carefully unroll it and remove the towel. Spread the white cream cheese frosting on the cake but leave about 1 inch of the edges without filling. Now roll up the cake slowly, starting from a short side. Have a serving platter ready and place the cake with the seam side down, on it. Put the cake into a refrigerator for half an hour. Take the cake out and cut off a 3-inch slice from one end of the cake, diagonally. This part will be a branch on your Buche de Noel. Place this small piece where you want the branch to be.

The last step is the decoration. To do that, frost the cake entire with the chocolate cream cheese frosting. You can choose to leave one or all ends of the cake unfrosted, so the white filling shows. Chill if necessary and use a fork or toothpick to create a pattern on the frosting that will make your cake look more like a tree log. Keep it in the refrigerator until you are ready to serve.

If you like, you can sprinkle powdered sugar before serving, decorate with mushrooms made with meringue or marshmallows or just use chocolate sprinkles.

The main thing to keep in mind making this beautiful Christmas Dessert is to roll the cake while it’s still warm and to not bake it too long. You can make numberless variations to the filling by adding other ingredients in place of the almond slices, like berries, chocolate pieces, or other nuts, flavor it with almond extract or espresso powder or add cocoa powder to make it chocolaty; or you can just use a completely different filling based on whipped cream or chestnut filling. You can be sure that this Christmas Dessert will be a highlight to your Christmas Menu, not only because of its taste, but also because of its unique look.

Linzer Cookies Directions:

Take your pecans or other nuts and use a food processor to grind them into fine powder (like flour), together with ½ cup of the flour. Don’t over-process them or they will become wet due to the nut oil.

In a large bowl, mix together the finely ground hazelnuts and pecans (nut flours), the remaining 2 cups flour, cinnamon, baking powder and the pinch of salt.

With an electric mixer, beat the butter and sugar until you have a nice, fluffy and light-colored mixture. This should take about 5 minutes of beating. Now it’s time to add the egg. Reduce the speed of the electric mixer and slowly beat in the flour mixture. You should now have some nice dough. Divide the dough into two parts and shape each one into a disc, wrap them in plastic wrap and put them into the refrigerator for two hours minimum and up to two weeks. You can also freeze the dough for about a month until you are ready to make the cookies.

When ready to make them, preheat your oven to 325 degrees and line a baking sheet with parchment paper.

Lightly flour your working surface so the dough won’t stick. Roll out the dough to about 1/8 inch thickness. It’s a good idea to put your rolled out dough in the refrigerator for another 20 minutes, so it’s easier to cut the shapes out. Now cut out star shapes (or other shapes). Cut out a smaller star shape (or other) at the center of every second cookie (you will need two cookies to make one Linzer cookie: one uncut and one with a cut-out). Transfer them to the baking sheet. Let about 2 inches of space between each cookie.

Bake them for 13-14 minutes or until pale gold and let them cool on the baking sheet on wire racks for about 10 minutes. Then transfer the cookies to the racks and let them cool down completely.

When you’re ready to serve them, dust the cookies with the cut-out with powdered sugar. Spread about ½ tsp of preserves onto the center of the uncut cookie and top it with the cookie with the cut-out.

Directions:

In a large bowl, stir together 1 and half cups of flour, the potato flakes, and the yeast; set aside. In a small saucepan, heat and stir milk or water, sugar, butter or cooking oil, orange peel and salt just until warm. Add the flour mixture. Beat with an electric mixer on a low speed for 25-30 seconds , scraping bowl constantly. Now beat on high speed for 3 minutes. Using a wooden spoon, stir in as much remaining flour as you can.

Turn the dough out onto a lightly floured surface. Knead in enough reaming flour to make dough that is smooth and elastic (3-5 minutes in total). Shape the dough into a ball. Place in a greased bowl and turn once to grease surface. Cover and let it rise in a warm place until doubled (approximately 1 hour).

Punch dough down. Cover and let it rest for 10 minutes. Meanwhile, lightly grease twenty four 2 and half inch muffin cups and set aside.

Divide dough into 24 equal portions; shape into balls. Place one ball into each prepared muffin cup. Cover and let it rise in a warm place until nearly doubled, say for about 30 minutes.

Bake at 350 degrees F for 20-25 minutes or until golden brown. Carefully invert rolls from muffin cups onto the wire rack. Let it cool slightly. Invert again onto a serving platter. Spoon over orange glaze. Serve warm.

Directions for Orange Glaze:

Finely shred peel from orange and then peel and section orange. In a medium bowl, combine shredded orange peel and sections, vanilla and few drops of almond extract. Beat on low speed until almost smooth. Beat in 1 ¼ cups powdered sugar. Stir in enough additional powdered sugar (approximately 1 cup) until glaze has a spooning consistency.

Image Via: Tablespoon

[ad#co-3]

Ingredients

1-1/4 cups all purpose flour

4 to 5 strips bacon

1/3 cup choco chips ( you can use bittersweet or semisweet)

1/8 tsp cinnamon powder

A pinch of chipotle

1 tsp vanilla extract

1 egg

1/2 cup brown sugar

1/2 cup regular granulated sugar

1/2 cup peanut butter

4 tbsp unsalted butter (at room temperature)

1/4 tsp salt

1/4 tsp baking soda

1/4 tsp baking powder

1/2 cup crushed honey roasted peanuts (optional)

Mouthwatering Cookies

Image Via: The Baker Chick

Directions

Preheat the oven to 180°C and line two baking sheets on two baking trays.

Take a large glass bowl and mix flour, cinnamon powder, chipotle, baking soda, baking powder and salt.

In a large skillet cook bacon over medium heat until crisp. It should take about 4 to 6 minutes per side. Transfer onto a paper napkin. Keep the dripping for later use. Let the bacon cool down. Also get rid of any uncooked or chewy bits.

In another large glass bowl beat butter along with bacon drippings. Use an electric beater on medium speed to do the same. Now carefully add peanut butter and beat for another minute.

To the above bowl add granulated and brown sugar and beat until creamy. It should take about 4 to 5 minutes.

Now add to it egg and vanilla. Beat until fluffy, which should be about 2 to 3 minutes.

Reducing the beater speed to low, add the flour mix slowly into the second bowl to combine all the ingredients well.

Now mix in peanuts, if you choose to use them.

Next keep aside two tablespoons of choco chips and bacon aside and mix the rest into the batter.

The batter will not be flowly, it will more of dough consistency.

Make about twelve equal sized balls of the dough and press each in-between your hands to form a cookie shape. Place them on the baking tray.

Now press the reserved bacon and choco chips on the cookies.

Bake for about 12 minutes and then allow the cookies to cool on a rack.

Serve with love!

You can reserve these cookies for about three to four days in an air tight container. This gorgeous Father’s Day Recipe is best served with sweet and thick maple syrup. Another thing, if your dad is a bacon fan doubling the bacon quantity won’t harm a bit. For the topping instead of adding crushed bacon with cookies you can use larger strips too! Do share your views on this recipe and let us know of any interesting twists you can think of!

Ingredients

1 1/2 cups all purpose flour + 2 tbsp (separate)

3 bananas mashed

1 egg

3/4 cup white sugar

1/3 cup brown sugar

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/3 cup molten butter + 1 tbsp (semi-molten)

1/8 tsp cinnamon powder

Image Via: Pip And Ebby

Directions

Pre-heat the oven to 375ºF.

Lightly grease 10 muffin cups.

In a large glass bowl mix 1-1/2 cups flour, baking powder, baking soda and salt.

In another bowl blend together molten butter, sugar, bananas and egg. It would be great if you could lightly beat the egg beforehand.

Mix the flour bowl contents spoon by spoon with the banana bowl contents.

Fill each muffin cup to 2/3rd its capacity.

In a small bowl mix brown sugar, 2 tbsp flour, 1 tbsp butter and cinnamon. Mix gently so that the resultant mixture is coarse. Sprinkle this mixture over the muffins as a topping.

Bake in the preheated oven for about 20 minutes.

Ready to serve.

Present her these muffins, delicately wrapped and placed in a classy basket. Your mother is just going to love it! You can replace the All purpose flour with whole wheat flour for a more nutritious take on the recipe. The resultant muffins won’t be as light but very yummy nonetheless. You can also add a teaspoon of vanilla essence in the banana batter for an extra punch of flavors. Do share if you plan to bake these muffins this Mother’s Day and of any interesting twists you might want to give to the recipe.

Now roll the dough into a thin flat sheet and cut heart shaped biscuits using a heart shaped cutter. Use all of the dough to make heart shaped biscuits.

Line the biscuits on a parchment paper lined baking tray and bake for 8 to 10 minutes at 180°C. By the end of it, the biscuits should become pale golden.

Take them out and puncture a small circle in the centre using a small cutter. Fill the hole with cherry jam.

Return to the oven and bake for another 2 to 3 minutes. Cool the biscuits on a wire rack.

Dust with icing sugar before serving.

Instead of using cherry jam as a topping, you can also use a chocolate dip instead. You can try a variety of cutter shapes too! For instance, you could make round biscuits with heart shaped centres. Be free to use shapes that your beloved loves. You can also sandwich the cherry jam in between two biscuits and make a sandwich biscuit. Let your imagination run wild and just bake! Do share your thoughts on this one!

Creamy, cheesy, chicken lasagna! Does it make your mouth water? Well, my last Sunday’s visit to the supermarket made mine water! I came across a gorgeous display of tempting lasagna pasta sheets and I had a severe craving for the same. The cheese stacked up in the next section made me imagine some really delicious food. Of course, last Sunday’s Dinner turned out to be Chicken Cheese Lasagna, that had us all licking our cutlery clean;) I would love to share the recipe for this perfect Sunday dinner meal and see if it works the same for you.

Ingredients

9 lasagna sheets

1 medium onion, chopped fine

2 cloves garlic, minced

1 stick butter

1/2 cup all purpose flour

2 cups chicken broth

1-1/2 cup milk

4 cups shredded mozzarella cheese

1-1/4 cup parmesan cheese

2 cups ricotta cheese

1 tbsp fresh chopped parsley

1 tsp oregano

1 tsp dry basil

1/4 tsp freshly ground pepper

2 cups cooked chicken, cut into bite size pieces

3 cups baby spinach, thawed, drained and chopped

Directions

Preheat the oven to 350°F.

Heat a large deep pan and boil water in it. Add a lot of salt to make the water really salty. Dip the lasagna sheets in the boiling water and cook them for about 8 to 10 minutes.

Once done, remove the sheets from boiling water and rinse with cold water.

In a separate pan, melt butter. Add to it onions and garlic. Cook them until they are soft and give out a nice cooked smell.

Now stir in flour and salt and cook until the mixture becomes bubbly.

Now fold in chicken broth and milk and boil for a minute.

Add 2 cups mozzarella cheese and 1/2 cup parmesan cheese to the above mix. Stir continuously till the cheese melts and the mixture turns into a good saucy consistency.

Stir in basil, oregano and ground pepper. Bring down from heat.

Pour 1/3 of the sauce in a baking dish(9”X13”)

Place three lasagna strips over the sauce to cover the base. On the top of lasagna strips spread chicken and ricotta cheese evenly. You could even premix chicken and ricotta cheese for a better spreading consistency.

Now top it up with 3 more lasagna strips, 1/4 of the remaining sauce mix, spinach and the remaining mozzarella cheese and 1/2 cup parmesan cheese.

Place 3 more lasagna strips on it and pour all of the remaining sauce on the top. Garnish with 1/4 cup parmesan cheese & parsley and put away to bake for about 40 minutes at 350°F.

Let the lasagna cool off for a bit and then serve hot.

This Sunday Dinner Recipe is a perfect winter meal. The warm lasagna served fresh and hot does so much to bring down the winter chill. If you want some more flavors in this lasagna recipe, try adding thinly sliced mushrooms along with the spinach. They taste amazing too! This lasagna goes well with fresh homemade garlic bread too. You might want to give it a try. I would love to hear what you have to say about this recipe. Please pour in your feedback.
