Tuscan White Bean and Garlic Chicken Soup

Ingredients
1 ½ boneless Chicken Breast, thawed
3 tablespoon of Olive Oil
2 tablespoons of Butter
2 Shallots; chopped
2 (15-ounce) cans of Cannellini Beans, drained and Rinsed
1 Sage Leaf
4 cups of Low-Sodium Chicken Broth
4 Cloves of Garlic, cut in ½
½ cup of Cream
½ teaspoon of Freshly Ground Black Pepper
Directions
- First take your chicken and season it with salt and pepper to taste, then cook the breast on a medium-high heat in a medium sized, greased pan. Be sure you cook both sides evenly or until both sides have turned a light brown. Then take the chicken out of the pan, and with a fork shred the chicken down and place the shredded parts in a bowl and set to the side.
- Next, for your fall soup, you want to place a medium, heavy soup pot over medium heat. After the pot has been set put the butter, 1 tablespoon of olive oil, and shallots into it. Stir the occasionally or until the shallots begin to softened (approx. 5 min).
- Third on the list is stirring in the sage and beans, following them will be the chicken stock then bring the entire mixture to a simmer. Now take the garlic and simmer the mixture until the garlic has softened which takes about 10 min.
- Carefully, ladle 1/3-1/2 of the soup into a blender and puree the scoops until smooth. (Keep in mind not to hold the top of the lid too tightly shut because hot liquids have a tendency to expand when it is blending).
- Once the entire soup has been puree put it back into the pot and set on the pot on a low heat, also stir in the shredded chicken, cream and pepper and keep covered while over a low heat. Then Enjoy!
