Whether you are trying to find a wholesome meal for the kids or yourself, what can deny the appeal of pizza? Kids love pizza, we all know it! Todays recipe, inspired by Martha Stewart’s Spinach and Cheese Pizza, is a meal that your kids will relish and finish in minutes. As a parent, it won’t have you spending hours in the kitchen. So lets bring some Italian flavors to the table and have our kids asking for more.
Personal Spinach and Cheese Pizzas

Ingredients
4 mini whole-wheat pitas
1/2 cup ricotta cheese (you can opt for the half skimmed version)
1/2 sliced red onion
2 garlic cloves finely chopped
1/ tsp dried oregano
8-10 ounces fresh spinach, washed and chopped
about 20 balls bocconcini, halved
salt and pepper to taste

Directions
- Heat your broiler/grill and set the rack about 4” away from the heat.
- On a large baking sheet spread aluminum foil (to be placed on the rack finally).
- Cut the pita into halves and place them on the aluminum foil. The cut side should be up.
- In a small glass bowl put ricotta, oregano and garlic. Season with salt and pepper.
- Spread the mix on the cut pita halves equally.
- Top with spinach and bocconcini. Season with salt and pepper again if you desire to.
- Broil or grill until the cheese melts and starts browning a bit. Do not forget to rotate the baking sheet midway.
- Serve hot.
Kids of this generation have taken a liking to pizzas. Why deny them the delights if you can cleverly turn them into something wholesome and nutritious? You can feel free to add a bit of corn or boiled and shredded chicken onto the pizza too. Your kids will love it. Whilst reading the recipe you might have made mental notes of how you could alter the recipe a bit to suit you too!
