Though Thanksgiving is untouchably delicious, there is no denying that it’s far from a balanced meal. For those looking to eat healthier, Turkey Day can sometimes feel like a struggle to find enough items to fill a plate. If that sounds familiar, this list is for you. These veggie-packed Thanksgiving recipes are a lighter take on classic comfort foods, that don’t sacrifice that decadent holiday feel.
Thanksgiving Classic Side: Veggie Macaroni & Cheese

Ingredients:
1 large head of cauliflower
1 large head of broccoli
1 large onion
1 ½ cups light cream
1 egg yolk
2 teaspoons salt
½ teaspoon black pepper
½ teaspoon cayenne pepper
¼ teaspoon ground nutmeg
1 ½ cups sharp cheddar cheese
½ cup gruyere cheese
½ breadcrumbs (optional)
Procedure:
- Preheat the oven to 375 degrees.
- Prep your ingredients. Chop the cauliflower and broccoli into bite-sized florets. Finely chop the onion. Grate all the cheese.
- Place the florets into a large, microwave safe bowl and cover with about a ½ cup of water. Microwave the vegetables for 7-10 minutes or until they are fork tender. When done, drain the florets and set aside.
- While the vegetables cook, heat a tablespoon of butter in a skillet and sauté the onions until they have become lightly browned. Reserve them for later.
- Ensure the skillet is on medium heat. Whisk together the cream and egg yolk, stirring constantly until the mixture is thick enough to coat the back of the spoon and has become glossy.
- Add in seasonings and half the cheese. Stir until the cheese has melted and a sauce has formed.
- Toss vegetables and sauce together until they are thoroughly coated.
- Transfer the vegetable mixture into a greased 13×9 baking pan. Cover with the remaining cheese and top with breadcrumbs, if using.
- Bake it for 30 minutes. Afterwards, if you are using breadcrumbs, broil on high for an additional 5 minutes to brown the top.
This Veggie Macaroni & Cheese recipe serves 10-12, depending on portion size. While there’s certainly nothing wrong with a bit of indulgence around the holidays, these veggie-packed recipes will allow you to do so without all the extra guilt.
