Winter Comfort Food: Broccoli and Potato Soup Recipe

Who doesn’t love a yummy broccoli and potato soup recipe on a cold winter evening? Delicious warm soup recipes are definitely the dish for the winter season. They warm you up after a long cold day. And there are so many choices available, from different ingredients to various textures you can use to prepare a delicious, yet light and healthy dish. So if you like soups just go ahead and try out this creamy broccoli and potato soup from All  recipes!

Broccoli and Potato Soup Recipe

Soup Recipe Ingredients:

For 6 servings

1 chopped onion
2 tablespoons butter
5 crushed garlic cloves
8 cups broccoli stems and florets
1 large cubed potato
3 cups chicken broth
3 tablespoons butter
Salt and pepper
1 cup milk
3 tablespoons flour
1 cup heavy whipping cream

Soup Recipe Directions:

  1. In a stock pot, melt the first two tablespoons of butter over medium heat.
  2. Toss in the onion and garlic and cook until they are tender, for about 8 to 10 minutes. Stir occasionally.
  3. Add the potato and the broccoli stems and season with salt and pepper to taste.
  4. Add the broth and cover the pot. Simmer until the potato softens. That should take about 10 minutes.
  5. Now mix the broccoli florets into the soup and simmer about 5 minutes more, until the broccoli florets and stems are tender.
  6. Remove a few florets and keep aside.
  7. Using a hand blender, blend the soup until it is smooth and creamy.
  8. In a small saucepan, melt the 3 tablespoons of butter over medium heat.
  9. Pour in the milk, the flour and the heavy cream and while whisking continuously.
  10. Season with salt and pepper to taste.<
  11. Keep whisking for about 5 minutes, until the mixture start bubbling and gets thick.
  12. Pour the mixture into the soup and combine well.
  13. Add the kept aside broccoli florets before serving the soup.

This soup will keep you warm and full for a long time. It is super tasty and just good for the soul. For an extra twist, serve the soup in individual bread bowls, sprinkle some shredded cheddar or bacon over it or just do all that together. Enjoy!
