A delicious brunch is a great way to begin your weekend mornings. If you prefer to start it on a sweet note, try this banana caramel muffin recipe. Banana Gooey Caramel Muffins

Preparation time: 30 minutes
Yields: 12 servings
Ingredients
1 cup self rising flour
¾-cup regular flour
¼ cup powdered or caster sugar
50g melted, cooled butter
1-cup milk
1 egg lightly beaten F
ew drops of vanilla essence
3 medium mashed bananas
1/3 cup caramel bits

Procedure
1. Preheat oven to 190 degree Celsius. Grease a 12 hole (1/3 cup capacity) muffin pan. In a large bowl, combine sugar and flours. Make a hole in the center and add butter, egg, milk, and essence. Stir until combined.
2. Fold in caramel bits and banana. Spoon mixture evenly into prepared pans.
3. Bake for 15-20 minutes or until golden and firm to touch. Let it remain in the pan for 5-8 minutes. Transfer to wire to cool. Serve.
This quick and easy brunch recipe is sure to be a hit. However, just make sure not to over stir the batter or else you will end up with a dense texture instead of light, fluffy muffins.
