Preparation

  • Preheat oven to 400°F.
  • Season the chicken breasts or thing and legs in a large bowl with grill seasoning, poultry seasoning, black pepper, and salt.
  • Take a medium frying pan and heat two tablespoons of olive oil in it. Put the chicken and fry each side for a few minutes until they become brown. It will help removing some of the drippings and flavors of the chicken into the pan.
  • Transfer the chicken into the oven and roast for 15 minutes or more or until their juices run clear.
  • In the meantime, cool pancetta or bacon after adding one more tablespoon of olive oil into the pan. Cook until the pancetta or bacon becomes crisp. Now, add chopped rosemary, garlic, and onions to the pan and cook for 5 minutes. After that, add ½ cup of chicken stock, vinegar, tomato sauce, Worcestershire sauce, and sugar. Let the sauce simmer for 5 minutes or more at low heat. This is your barbecue sauce.
  • Now, take another frying pan and bring the milk and the remaining 1-1/2 cups of chicken stock into a boil. Whisk in polenta and season with black pepper and salt. Now, whisk the mixture for 2 or 3 minutes until it becomes thick. Stir in cheese and butter and remove from heat.
  • Remove the chicken pieces from oven and transfer them in a large plate. Turn in barbecue sauce.
  • Take four bowls and fill the bottom with polenta mixture. Place the chicken pieces over them. Pour the extra sauce over the chicken pieces. Finally, garnish with some basil leaves and serve.

Tips

  • If you want to make a quick meal, just use premade polenta.

This BBQ dinner recipe is perfect for family dinner and a party as well. The sauce is incredibly flavorful, the chicken is tender, juicy, and far from bland, and the polenta is creamy and cheesy – an excellent combination to be a guest-worthy dish!
