Summer is the time for BBQ! If you are bored with too many rib and pork BBQs, try this delectable chicken dish from Food Network. This BBQ dinner recipe is easy to prepare and cook. It is actually so delicious that you will not be able to wait to have people over for a barbecue this summer. Take a look at the recipe:
Dressed Up BBQ Chicken Dinner with Polenta Recipe

Ingredients
4 servings
4 bone-in chicken thigh and leg or chicken breasts
Pancetta or bacon (4 thick cut slices; chopped)
Chicken stock (2-1/2 cups)
Milk (1-1/2 cups)
Brown sugar (3 tablespoons)
Butter (2 tablespoons)
Parmigiano-Reggiano (1/2 cup; grated)
Quick cooking polenta (1 cup)
Extra-virgin olive oil (3 tablespoons)
Balsamic vinegar (1/ cup)
Fresh rosemary (1 or 2 sprigs; finely chopped)
Garlic (2 cloves; finely chopped or grated)
Red onion (1 medium; chopped)
Fresh basil leaves (torn)
Worcestershire sauce (1 tablespoon)
Tomato sauce (1 cup)
Grill seasoning (2 teaspoons)
Poultry seasoning (2 teaspoons)
Black pepper (freshly ground)

Preparation
- Preheat oven to 400°F.
- Season the chicken breasts or thing and legs in a large bowl with grill seasoning, poultry seasoning, black pepper, and salt.
- Take a medium frying pan and heat two tablespoons of olive oil in it. Put the chicken and fry each side for a few minutes until they become brown. It will help removing some of the drippings and flavors of the chicken into the pan.
- Transfer the chicken into the oven and roast for 15 minutes or more or until their juices run clear.
- In the meantime, cool pancetta or bacon after adding one more tablespoon of olive oil into the pan. Cook until the pancetta or bacon becomes crisp. Now, add chopped rosemary, garlic, and onions to the pan and cook for 5 minutes. After that, add ½ cup of chicken stock, vinegar, tomato sauce, Worcestershire sauce, and sugar. Let the sauce simmer for 5 minutes or more at low heat. This is your barbecue sauce.
- Now, take another frying pan and bring the milk and the remaining 1-1/2 cups of chicken stock into a boil. Whisk in polenta and season with black pepper and salt. Now, whisk the mixture for 2 or 3 minutes until it becomes thick. Stir in cheese and butter and remove from heat.
- Remove the chicken pieces from oven and transfer them in a large plate. Turn in barbecue sauce.
- Take four bowls and fill the bottom with polenta mixture. Place the chicken pieces over them. Pour the extra sauce over the chicken pieces. Finally, garnish with some basil leaves and serve.
Tips
- If you want to make a quick meal, just use premade polenta.
