Healthy Summer Recipe – Fish Tacos with Salsa

Ingredients
- ½ small red onion (diced)
- ½ cup of fresh cilantro (roughly chopped)
- 1 jalapeno paper (seeded and finely chopped)
- 1 tbsp and 2 tsp of extra-virgin olive oil (and a little extra for brushing)
- 1 romaine lettuce (thinly sliced)
- 1 avocado (sliced)
- 1 tsp of chipotle Chile powder
- 1 pound of skinless bass fillets (wild striped bass)
- Juice from 2 limes (and wedges for serving)
- 4 cups of seedless watermelon (diced)
- 8 corn tortillas
- Kosher salt
Instructions
For the Watermelon Salsa
- Mix the red onion, watermelon, lime juice, jalapeno, and cilantro in a bowl. Use gloves as you handle the jalapeno pepper as it might cause your hands to sting.
- Add 1 tablespoon of olive oil and ½ teaspoon of salt and set aside.
For the Tacos
- Preheat your grill to high. Sprinkle the Chile powder, remaining olive oil, and ½ tsp of salt on both sides of the fish.
- Brush the grill with some olive oil.
- Place the fish on the grill and grill until the pieces are cooked through (for approximately 5 minutes per side).
- Put the fillets on a plate. You can chop them into small pieces.
- In a small bowl, mix the lettuce with 2 tbsp of the watermelon salsa.
- Warm the tortillas and fill them with fish, avocado, lettuce, and watermelon salsa.
- Serve with the lime wedges.
