- In a skillet, cook and stir Italian sausage over medium heat, breaking it into crumbles as it cooks for 5 to 8 minutes or until well browned. Drain excess grease. Set aside.
- Pre heat oven to 350 degrees F or 175 degrees C.
- Using olive oil grease the bottom and sides of a 10 inch springform pan.
- Cut 1/3 of the dough of the loaf and set aside under a cloth. Form the reaming dough into a ball and roll into an approximately 14 inch circle on a floured surface.
- Line the greased pan with the rolled dough, allowing it to hand over the edge by inches all around.
- Layer 1/2 of the cooked sausage, 1/2 the mozzarella cheese, 1/2 the ham, 1/2 the provolone cheese, ½ the salami, and ½ the pepperoni into the pie crust.
- Spoon and spread ½ the ricotta cheese over the layers of meat and other cheeses.
- Sprinkle ½ the Parmesan cheese over ricotta.
- Pour ½ of the beaten eggs over the prepared layers, continue layering the remaining meats and cheeses.
- Pour remaining beaten eggs over the last layer of the cheese.
- Roll the remaining piece of bread dough to a circle of about 12 inches in diameter. Arrange the piece over the pie to form the top crust. Roll and pinch the bottom crust overhang over the upper crust to seal the filling.
- In a small bowl, beat one egg with water. Brush the top of the pie with this beaten egg.
- In a preheated oven, bake the pie for 50-60 minutes or until the crust is golden brown and the filling is set. A toothpick inserted into the middle of the crust should come out clean.
- Allow it to cool for 25-30 minutes in the pan before removing pie from the pan. Transfer to a platter and cut into small slices for servings.
