Fall Dessert: Easy Pumpkin Pie Cupcakes

Ingredients
1-1/2 cup whole wheat flour
1-1/2 cup all purpose flour
4 large eggs
3 cups white sugar
5 tsp pumpkin pie spice
1 can pumpkin pie filling
1/2 cup cooking oil
2 tsp baking soda
1/2 cup water
1-1/2 tsp salt

Directions
- Pre-heat the oven to 330ºF.
- Line 24 muffin cups with paper liners.
- Mix whole wheat flour, all purpose flour, baking soda, pumpkin spice and salt in a large bowl.
- Next blend sugar, oil, water, eggs and pumpkin pie filling in a separate bowl.
- Mix the contents of both the bowls little by little until a uniform batter is obtained.
- Fill the muffin cups with batter up till the 3/4th mark.
- Bake for about 30 minutes. Check the muffin centres with a toothpick.
- Once done cool the muffins on the wire rack.
