New Year’s Eve Recipe: Chocolate Champagne Truffles

New Year’s Eve is fast approaching and you should start thinking about the preparations that need to be done. That goes for having a party at your house as well as for bringing some nice gift to the host/hostess of a party you’re invited to. New Year’s Eve Recipe: Chocolate Champagne Truffles

Chocolate Champagne Truffles

Ingredients

Makes 25-30 truffles

¼ cup of butter that has been cut into small pieces

1 egg yolk beaten

3 tablespoons whipping cream

6 ounces of coarsely chopped semisweet chocolate

3 tablespoons champagne

For decoration:

Use sifted powder sugar, coarse sanding sugar, unsweetened cocoa powder or melted white and/or dark chocolate. For more fancy decoration you can use silver and/or golden edible luster dust or even edible golden leaves to create the dusted truffles.

Directions

  1. In a large saucepan, combine the whipping cream, the butter and the chocolate by cooking and constantly stirring over low heat. Do this until the chocolate melts.
  2. Slowly pour about half of this mixture into the beaten egg yolk without stopping to stir.
  3. Pour that new mixture again into the saucepan and cook and stir for about 2 minutes over medium heat.
  4. Remove from the heat and stir in the champagne. Pour the mixture in a mixing bowl and chill about one hour or at least until you have a completely smooth and cooled down mixture. Stir occasionally.
  5. Now beat the mixture with a mixer about one minute on medium speed, or just until you have a slightly fluffy paste.
  6. Chill for about half an hour or until you have a mixture that can hold its shape.
  7. Using a spoon (or a melon baller or a small ice cream scoop if you have one), scrape across the mixture and form balls of about 1 inch of size. Line a tray with waxed paper and chill until firm.
  8. Now you can roll the balls in the decoration you choose or cover in chocolate and drizzle some more chocolate over them.
  9. Store them tightly covered in the refrigerator.
