Healthy Dinner: Honey-Glazed Salmon Salad

Ingredients
4 servings
4 salmon fillets (4 ounces each)
Honey (2 teaspoons)
Olive oil (1 tablespoon)
Pepper (1/2 teaspoon)
Smoked paprika (2 teaspoons)
Red pepper flakes (crushed; ¼ teaspoon)
Salt (1/2 teaspoon)
1 garlic clove (minced)
Cooking spray
For Salad
Shallot (finely chopped; 1-1/2 teaspoons)
Carrot (shredded; ½ cup)
Red onion (chopped; ¼ cup)
Fresh baby spinach (4 cups)
Dijon mustard (1 teaspoon)
Cider vinegar (2 tablespoons)
Olive oil (1/4 cup)
Preparation
- Preheat the oven at 350°F.
- Take an 11-inch x 7-inch baking dish and coat it with cooking spray. Place the salmon fillets in it.
- Combine the olive oil, honey, red pepper flakes, smoked paprika, minced garlic, pepper, and salt in a small bowl. Now, brush the mixture on the both sides of the salmon fillets.
- Put the fillets inside the oven and keep uncovered. Bake for 20 to 25 minutes or until the fish filets can be flaked easily with a fork.
- Cut the fillets into 1-inch pieces or as you desired.
- Combine the shredded carrot, chopped red onion, and baby spinach in a large bowl. Take four serving plates and divide the salad among them. Top the salad with salmon pieces, divided evenly among the four plates.
- Combine olive oil, mustard, vinegar, and chopped shallot in a small bowl. Drizzle over the salad and salmon.
- Serve immediately.
