Summertime Treat: Hickory Nut Pie Dessert

A great summertime dessert should require minimal cooking, should be easy to assemble and must highlight the flavor of the season. To ensure that your cookout ends on a sweet note, try this warm weather dessert recipe-Hickory nut pie. If you cannot find hickory nuts, use pecans instead, as they are from the same family and make a great substitute.

Total time: 50-60 minutes

Yields: 6-8 servings

Ingredients

3 beaten eggs

1 cup light corn syrup

1 cup sugar

2 tablespoon melted butter

1 teaspoon vanilla essence

Pinch of salt

1 cup hickory nuts, chopped or toasted pecans

1 (9 inches) unbaked pastry shell

Procedure

1. In a bowl, beat corn syrup, butter, sugar, salt, and vanilla essence until blended. Add eggs and mix well. Stir in hickory nuts. Pour the mixture into pastry shell.

2. Cover the edges loosely with foil. In a preheated oven, bake at 350 degrees for 25-30 minutes. Remove foil and bake again for 10-15 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack before serving. If desired, garnish with additional nuts.

This sweet and crunchy summer dessert is sure to wow your guests. To enhance the flavor, add a shot of bourbon and make it even more southern.
