Mothers Day Dessert Ideas: Lemon Soufflé Recipe
The soufflé has quite the reputation for being a difficult-to-master dessert. But, with patience and adherence to the recipe, it’s completely possible to make in your own home – and only you will know how simple it really was. In particular, lemon soufflé is a sweet and refreshing dish that’s bound to impress Mom when you serve it for her Mothers Day dessert.

Ingredients:
3 tablespoons butter, divided
½ cup plus 2 tablespoons sugar, divided
6 eggs, separated
1 cup milk
2 lemons (1/3 cup juice and 2 tablespoons zest)
1 teaspoon vanilla
½ teaspoon salt
¼ teaspoon cream of tarter
Powdered sugar, for garnish

Directions:
- Preheat the oven to 375 degrees F.
- Prepare the ramekins by greasing them with a tablespoon of butter and coating the butter with 2 tablespoons of sugar. Set them aside for later.
- Heat the milk in a small saucepan over medium until it’s starts to steam.
- While that heats, whisk together the egg yolks, remaining sugar and butter, salt, vanilla, and lemon juice and zest until smooth.
- Gradually drizzle the milk into the egg yolk mixture, whisking constantly.
- When that’s combined, return the mixture to the saucepan and cook over medium heat, whisking constantly, until it takes on the consistency of pudding. Allow it to cool to room temperature.
- Meanwhile, use a mixer to beat the egg whites with the cream of tarter until stiff peaks form.
- Gently fold the egg whites into the yolk mixture.
- Evenly divide the batter between the ramekins.
- Bake the soufflés for 20 minutes or until the tops have risen and become golden brown.
- Serve immediately, garnished with powdered sugar.
The best thing about this soufflé recipe is that it can be tweaked to become as special and unique as your mom. If she’s a total chocoholic, sub semi-sweet chocolate chips for the lemon. Or, if she lacks a sweet tooth, use Gruyere cheese and chives to make it into a savory dinner instead of a Mothers Day dessert.
