Preparation:
- Make the whipped cream by pouring the cream in a large metal bowl and beating with an electric mixer for 5 minutes. Gradually increase the speed to medium and continue to beat for another 5-7 until stiff peaks form.
- Add in the honey and vanilla and beat until the peaks turn firm. Then cover and refrigerate.
- When you’re ready to make the peaches, melt the butter in a small saucepan with the brown sugar, cinnamon, and vanilla extract. Meanwhile, cut the peaches in half and remove the pits.
- Heat the grill to medium high while allowing the peaches to soak in the butter mixture.
- Grill the peaches for 3 minutes on one side to create grill marks. Then, flip them over and grill for another 2 minutes until they can be easily pierced with a fork.
- Remove the peaches from the grill and serve warm, garnished with the honey whipped cream.
This is one of those dishes that is incredibly versatile. If you don’t have whipping cream on hand, just use yogurt or ice cream. In the event that you don’t like peaches, pineapple or plums will be just as tasty. Keep this recipe on hand for a quick weeknight meal, impromptu dinner party, or any time you need a healthy summer dessert.
