Summer Dessert: Juicy Ripened Plum Cake Recipe

Nothing can be more delicious than a summer dessert that is sweet and juicy on a hot summer day and it becomes more appetizing if it is a mouthwatering cake with a fabulous taste. People may like plums or not but a juicy cake with plums is sure to be a hit in a party or a family occasion. Real Simple has come up with the idea of such a fabulous summer dessert.

Ingredients

8 servings

4 ripe plums (each of them wedged into 8 pieces)

All-purpose flour (1 cup)

1 large egg

Baking powder (3/4 teaspoon)

Baking soda (1/4 teaspoon)

Sour cream (2/3 cup)

Unsalted butter (1 tablespoon, ½ cup, and some extra for the pan)

Vanilla extract (1 teaspoon)

Kosher salt (1/4 teaspoon)

Granulated sugar (1/4 cup and 2/3 cup)

Preparation

  1. Preheat the oven to 350° F.
  2. Take an 8-inch cake pan and brush butter on it. Line its bottom with parchment paper.
  3. Put a large frying pan on the stove with a medium-high heat and melt one teaspoon of butter in it. Add plum slices and ¼-cup sugar into the butter. Cook the plums for 3 to 4 minutes until the sugar dissolves and the juices extracted from the plums become syrupy.
  4. Take a small bowl and mix the flour, baking soda, baking powder, and salt together in it.
  5. Pour 2/3 cup of sugar and the remaining ½-cup butter into another small bowl and beat with an electric mixer. Beat until the mixture becomes fluffy. Add the vanilla extract, sour cream, and egg, and keep beating.
  6. After that, add the flour mixture into it and whisk in until the mixture is smooth.
  7. Arrange the slices of plums in the cake pan and pour the juices (if any) over them. Now, pour the batter over them.
  8. Bake the cake for minimum 50 to 55 minutes. Take it out of the oven and let it cool for at least one hour.
  9. Take it on a plate and top it with powdered sugar (optional) or anything else if you want.
  10. Serve!

If the plums are slightly tart, the cake will be a perfect combo of a sweet-tart dessert. If your plums are sweet, you can reduce the amount of sugar in the plum mix. Serve this summer dessert with ice cream or anything else and be ready for the shower of compliments!
