Of course the flavors cannot be missed too. The Pan Seared Chicken Breast With Herbs & Potato Hash recipe, ensures a healthy meal with a punch of mouth watering flavors. Inspired from a classic seared chicken recipe by Robert Irvine, this beautiful brunch recipe brings forth the best flavors to the table.
Pan Seared Chicken Breast With Herbs & Potato Hash

Ingredients
For The Pan Seared Chicken
2 chicken breasts with skin on
2 tbsp oil (grape seed preferred)
2 cloves minced garlic
1 tbsp minced thyme leaves
1 tbsp chopped rosemary leaves
1 tbsp chopped parsley
1 tbsp minced chives
Salt and Pepper
1 cup dry white wine
2 tbsp unsalted butter
1 large tomato cubed
For The Potato Hash
1 large potato
1 small onion, sliced
1 squash
1 zucchini
1 egg beaten
2 tbsp all purpose flour
2 cloves minced garlic
1 tsp minced thyme leaves
1 tsp minced tarragon leaves
1 tsp cajun spice
A little oil

Directions
For The Pan Seared Chicken
- Season both sides of the chicken breast with salt and pepper.
- Heat a large saucepan and pour in a little oil. Keep the flame high.
- Sear the skin side of the breast for 4 to 5 minutes on a high flame. Flip the side and cook on medium heat for another 7 to 8 minutes covering the chicken with a lid.
- Once the chicken is cooked on the second side, add wine, garlic and the herbs. Cook until the liquid reduces to about half the original amount.
- On another pan, sauté one cubed tomato for about 2 mins and spread on the serving plate.
- When the chicken is done, it can be allowed to rest on the serving plate on the bed of sautéed tomatoes. You can slice the chicken into slices too.
- After the pan has cooled a bit, add butter to the juice remaining in the pan. Pour the pan sauce on to the chicken and tomato bed.
For The Potato Hash
- Using a grater, shred squash, zucchini and potato and shift the grated mixture in a large bowl.
- Whisk in the egg, onion, herbs, garlic, flour, and cajun spice.
- The resulting mixture should be stiff enough to hold shape. If not, you can add more flour.
- Sculpt two cakes out of the mixture and pan fry them in a large saucepan using some oil.
- Once a golden brown color has been achieved flip the side and cook again.
- Carefully take the cakes off the pan and soak the extra oil using a paper napkin.
- Place besides the chicken and sauce on the serving plate.
- Garnish with your favourite greens.
