Rice pudding is one of my favorite all time desserts! Each fall I’m always excited to try new recipes to usher in the cooler weather and this season is no exception. If you remember in the past I paired with Hamilton Beach to feature their slow cooker and made a delicious Dutch Apple Pudding Cake. This time, I tried out their Rice Cooker and Hot Cereal Maker and made the best rice pudding with cooked rice recipe. Hamilton Beach’s Rice Cooker: Making Rice Pudding With Cooked Rice
How to Make Baked Rice Pudding:
There are so many variations of easy rice pudding. Some include using raw rice and baking the pudding, while others use already cooked rice. I prefer to use cooked rice as it seems to take less time!
Easy Rice Pudding Ingredients:
3 Cups cooked rice (1 ½ cups uncooked rice)
1 cups of white sugar
1 teaspoon vanilla
¼ teaspoon salt
1 teaspoon cinnamon
2 Cups milk – whole or 2%
¾ Cups raisins
3 large eggs
Baked Rice Pudding Recipe Directions:
1.Grease a 9-inch glass casserole dish with shortening, butter, or cooking spray. Preheat oven to 325 degrees and set casserole dish to the side.
2.Soak raisins in rum, or bring to a boil for 5 min raisins in a small saucepan with water. This will help the raisins to plump up. 🙂
3.Use the Hamilton Beach Rice cooker to make 3 cups of cooked rice. Depending on what type of rice you use will help determine how long to set the timer. I loved using the Rice Cooker because it kept the rice moist and fluffy. Set rice aside once cooked.
4.In a medium sized mixing bowl, combine spices, sugar, milk, eggs, and vanilla. Whisk together ingredients.
5.Drain raisins and fold rice and raisins into mixing bowl with wet ingredients.
6.Pour mixture into greased casserole dish. Put casserole dish in a large casserole dish or metal pan and fill with enough water to go ½ way up the side of the greased casserole dish. This will help the pudding cook evenly without scorching. Place them into the oven for 1 hour.
7.Remove rice pudding once it has set and is firm to the touch. Serve warm and if desired add whipped cream, cinnamon, or ice cream for an extra treat!
