Summer Dinner: Chicken Peach Pizza Recipe

In the summer time you will find an abundance of delicious, mouthwatering fruits. While these fruits are perfect to be eaten fresh and on their own, sometimes you just want to take it a step further. There is no better way to combine sweet summer fruits with some kind of salty or sweeter cheese and bread, these ingredients just work great together. So here is a really light Summer Dinner suggestion which is easy to make and will bring a new tasty twist on your table.

Ingredients

1 prebaked thin pizza crust (homemade or store-bought)

1 tsp extra-virgin olive oil

1/2 cup mozzarella cheese, shredded

1 cup cooked chicken breast, shredded

1/3 cup Gorgonzola cheese, crumbled

1 medium peach

1/3 cup balsamic vinegar

Directions

1. Preheat your oven to 400°.
2. Prepare your ingredients by crumbling the Gorgonzola cheese and thinly slicing the peach (leave the peel on). Divide the mozzarella cheese into small bowls.
3. Coat a baking sheet with cooking spray and place the pizza crust onto it. With a brush, brush on the crust the olive oil.
4. Now it’s time for the topping by spreading one bowl of the mozzarella cheese, the chicken, the crumbled Gorgonzola cheese and the fruit slices on the crust. Lastly, add the other bowl with the mozzarella cheese.
5. Put the pizza into the oven and bake for about 10-12 minutes or until the crust is getting brown.
6. To prepare the balsamic sauce, pour the vinegar into a small saucepan and cook over medium to high heat. Let it cook until it is reduced to about 2 tbsp. which should take more or less 5 minutes. As soon as the pizza is done, drizzle the balsamic sauce over it and serve.

This recipe is easy to prepare and you can use even left over food like the cooked chicken or even go for another kind of bread base, like flat or pita bread. Also, using different kind of cheeses like blue cheese, would really give this pizza a completely other direction. Some good prosciutto or onion would also go well with the other ingredients and should be worth a try.

The chicken peach pizza is perfect for a Summer Dinner and goes great with an arugula or other green salad as a side to complete it. Serve it to friends and family or just enjoy it by yourself on a warm summer evening to close a busy day.
