Summer Grilled Vegetable Kabobs Recipe

Ready for a summer grilling meal that will leave your mouth satisfied? Save the extra grilling area on your barbecue for this Summer Grilled Vegetable Kabobs recipe. It’s an extraordinary kabob recipe that is packed with the nutritious vegetable fillings. The combination of all the vegetable flavors provides a sumptuous taste that you will definitely love. The smoky flavor acquired through grilling adds extra flavor to the kabobs.

The Summer Grilled Vegetable Kabobs recipe is perfect for summer picnics, outdoor camping or even a simple family weekend bonding at home. It is so easy to prepare and quick to cook. This recipe is best served when hot and shared with the whole family. The whole process will take you less than an hour to make.

Ingredients

10 (12-inch) wooden skewers
1/3 cup extra-virgin olive oil
1/4 cup white balsamic vinegar
1/4 cup chopped fresh basil
3 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 red onion, cut into 1 1/2-inch pieces
1 yellow bell pepper, cut into 1 1/2-inch pieces
1 pound Chinese or baby eggplant, cut into 3/4-inch slices
3 small zucchini, cut into 3/4-inch slices
20 grape or cherry tomatoes

Procedure

  1. Soak skewers in water 30 minutes.
  2. Whisk together olive oil and next 5 ingredients. Thread onion and remaining ingredients onto skewers; brush vegetables generously with marinade.
  3. Grill, covered with grill lid, over medium-high heat (400°), turning occasionally, 10 to 12 minutes or until vegetables are tender.

That should do it! The whole ingredients should yield at least 4 delicious servings of Summer Grilled Vegetable Kabobs recipe. Feel free to add a little more or less of the ingredients. Don’t forget to pair it up with your favorite refreshments to complete the servings. This recipe certainly deserves a slot in your menu list.
