The temperature is steadily dropping and we are all going to need a nice warm pick-me up to counteract against those chilly winds! Warm Winter White Chicken Chili

Servings: 4-6 Servings
Ingredients
1 tablespoon of Canola Oil
2 (14.5-ounce) cans of White Beans
1 medium Jalapeno Pepper, minced
1 large Onion, chopped
2 medium Poblano Peppers, chopped
4 Garlic Cloves, minced
Kosher salt and freshly Ground Black Pepper
1 tablespoon of Ground Cumin
1 1/2 teaspoons of Ground Coriander
1 teaspoon Ancho Chili Powder
4 cups of Low-Sodium Chicken Broth
2 Limes, juiced (Plus, lime wedges for serving)
1 Rotisserie Chicken, meat skinned and shredded
1/4 cup of Chopped Cilantro Leaves
Tortilla Chips, coarsely crushed, for topping

Directions
- Drain and rinse the canned beans and, in a medium bowl, mash half of the beans with a potato masher until it becomes chunky. After mashing, set the beans to the side.
- Heat the canola oil in a Dutch oil over a medium-high heat. Next, add the peppers, onions, and garlic and sauté the combination until it becomes soft and fragrant (about 5 min). Season the vegetables with the Kosher salt and pepper to taste.
- Begin to add in the cumin, coriander and chili powder and let that sauté for about 1 minute. Stir in the chicken stock and lime juice and bring to a simmer. Take the beans that you have set to the side and ad them in and let it continue to simmer for 20 more minutes.
- After the 20 minute simmer, taste for seasoning and adjust if need be. Then, stir in the shredded rotisserie chicken and cilantro and simmer until they are heated through (5 more minutes). Finally serve the chili in individual bowls topped with a dollop of sour cream, crushed tortilla chips and lime wedges. And Enjoy!
