Christmas Food Gift: Espresso Sugar Cubes

Sugar Cubes with Espresso Flavor
It is a great gift for two reasons – it is fun to use and easy to make. You can use them for your Christmas morning coffee or for a rich mug of cocoa to enjoy on a cold evening.
Ingredients (180 Cubes)
• Espresso powder (1 tablespoon)
• Meringue powder (½ tablespoon)
• Sugar (½ cup)
• Hot water (½ teaspoon)
Preparation
- Preheat the oven at 250° F. In the meantime, mix meringue and espresso powder with hot water in a big bowl. Beat until the mixture is smooth. Set aside to let it cool.
- Add sugar to the mixture and beat it until it looks like damp sand. Take an ice-cube tray and spoon the mixture into it.
- Spread the mixture with a rubber spatula. Press the mixture of each compartment so that it settles there tightly. Scrape away the excessive mixture.
- Put the tray on a baking sheet and bake for at least forty minutes. After that, let the cubes cool down in the tray for minimum eight hours.
- Take out the cubes from the tray very carefully.

Put equal number of cubes in several small bags and tie them with colorful ribbons. Inscribe the names of the people, who you want to present these cubes, on the bags with black sharpie and letter stencils.

I’m assuming that this is “INSTANT espresso powder”??? I purchased some Espresso powder from Amazon to make these, but just happened to read one of the reviews (after I got it) that said that this is nothing but powdered espresso grounds, so it will not dissolve and you cannot make espresso from it (It’s so fine it will clog up a machine -and it also needs pressure to actually make espresso). It seems that some of what is sold out there is for baking only. If you want it to dissolve and make a drink (and not have espresso dust particles in it), then you have to buy “instant espresso”. I’m only assuming that this is meant to be instant -if anyone has any input -let me know!

Sorry -I have another question… I saw another recipe on another site with the same picture of the jute bags. That recipe is the exact same as this one except that one called for 1/2 tsp. of meringue powder, while this one calls for 1 TBSP. Have you actually tried this recipe? Does that 1/2 tsp make a difference?

Duh -sorry – I got that mixed up. The other recipe said 1.50 tsp for meringue powder which is the same as your 1/2 TBSP. The difference was that recipe called for 1/2 cup more sugar and 1 tsp. more of hot water. Just wondering if anyone knows if that makes a difference.
