Easter Lunch is a special affair. It calls for food that is yummy, mouth-watering, filling and yet easy to make. After you don’t want to spend all your time and energy in the kitchen! With so many guests visiting your home and kids running crazily in the corridors you sure want to be a part of the festivities. So here we bring a very easy to make pasta recipe that is super delectable and sure to make your Easter Lunch a special one!
Easter Lunch: Chicken Piccata Pasta Recipe

Ingredients
2 tbsp olive oil
1 chicken breast(can be kept whole or can be cut into 1” cubes)
1-1/2 tbsp butter
2 shallots, chopped
4-6 cloves garlic
2 tbsp all purpose flour
Juice of 1 lemon
1/2 cup white wine
1 cup chicken broth
3 tbsp capers drained
1/2 cup parsley chopped
1 pound-your favorite pasta (penne, spaghetti etc)
2 tbsp chopped chives for garnish
Salt and pepper to taste

Directions
- Place a deep non stick pan on medium high heat.
- Add 1 tbsp olive oil and chicken to the pan.
- Add salt and pepper to the chicken and brown both sides. Cook the chicken for about 5-6 minutes to achieve a light golden color.
- Remove the chicken from the pan and return the pan to heat.
- Add 1 tbsp butter, garlic and shallots to it and sauté for 2 to 3 minutes.
- Add all purpose flour and cook for another 2 minutes.
- Add white wine to the pan and reduce the mixture for about 1-1/2 minutes.
- Now add lemon juice and chicken broth to the reduction. Also add capers and parsley and let the contents come to form bubbles.
- Now add the remaining butter and again stir in the chicken that you kept aside.
- Cook for about 3-4 minutes.
- Toss cooked pasta in with the chicken and serve hot.
- You can garnish with chopped chives and season with salt and pepper as per your taste.
Call on your friends & family and serve this gorgeous Easter Lunch along with your favorite wine. The tangy lemon blends very well with the wine and results in a dish that is zesty and flavorsome. One can also use the traditional Piccata sauce as an accompaniment to this pasta dish. And do not forget to sprinkle on the chives as bring in some more freshness, color and interest to the recipe!
