.Easter Dessert: Sour Cream Chocolate Cake Recipe

Easter is almost upon us and for all those chocolate cravers; dessert is certainly the best part about the holiday weekend. Even though, Easter may not be as famous as the Valentine’s Day for candies and all those sweet treats, it does have its fair share of chocolates and other treats. That’s why we bring you this Easter dessert recipe that will get family and friends’ mouths watering fast.

Total Time: 20 minutes preparation + 1 hour, 20 minutes cooking

Yields: 8 servings

Ingredients

½ cup chocolate hazelnut spread

180g unsalted butter, coarsely chopped, at room temperature

1 ¼ cups caster sugar

1 teaspoon vanilla essence

3 eggs, at room temperature

2/3 cup sour cream

1 ½ cups plain flour

1 teaspoon baking powder

2 tablespoons white sugar

½ cup chopped pecans

125g dark chocolate, coarsely chopped

¼ cup pouring cream

¼ cup milk

  1. Preheat oven to 160 degree Celsius. Properly brush as round 20 cm springform pan using melted butter. Line pan base with non stick baking paper. In a bowl, place the chocolate spread and stir until softened.
  2. Using an electric beater, beat butter, sugar, and vanilla essence for 4-5 minutes or until pale and creamy. Add the eggs (1 at a time), beating well after each addition. Beat in sour cream. In a separate bowl, sift baking powder and flour. Fold the mixture into the butter mixture.
  3. Spread ½ the butter mixture into the pan. Top it with spoonfuls of chocolate spread and use a knife to create a swirled effect. Repeat the process with remaining butter mixture and chocolate spread. Top with pecans and sugar. Bake for 1 hour or until a knife inserted into the center comes out clean. Set aside for few minutes to cool slightly.
  4. Meanwhile, in a saucepan combine chocolate, cream, and milk over low heat. Cook, stirring for 3-5 minutes or until smooth. Set aside to cool slightly. Serve with the cake.

Slice into this Easter dessert to find layers of rich hazelnut rippled between sour cream sponge. Like always, tweak it to your taste and liking. For instance, pistachio kernels can be a good alternative for pecans. But don’t forget to let us know how it was.
