Preparation
(This preparation is made by using a gas grill)
1. Preheat a grill to 400°F.
2. Take a small bowl and mix onion powder, garlic powder, oregano, paprika, pepper, cumin, chipotle chile, brown sugar, and salt together into it.
3. Remove giblets from the chicken and loosen the skin over the meat of thighs and breast.
4. Rub the spice mixture under the loosened skin areas. Pour some beer inside the cavity and rub some more spice on the skin of other areas.
5. Fold the wings under the body and use kitchen string to knot the legs together.
6. Turn off one burner of the grill. Place a drip pan carefully under the grill rack that is on the side of the turned-off burner.
7. Put the chicken on the grill rack with its breast-side down. Pour half the beer inside the chicken.
8. Cook the chicken for 45 minutes after closing the lid.
9. Turn the chicken upside down, pour the remaining beer into the cavity, and continue cooking with a closed lid.
10. Stop grilling when an instant-read thermometer registers 165°F after being inserted into the meaty part of the thigh.
11. Take the chicken out of the grill and remove the string after 10 minutes.
The rubbed spice gives the chicken extra flavor while the beer keeps it nice and juicy.
Apart from serving in a party, this chicken recipe can make a delicious dinner too. Spend the entire day of the 4th of July outing and came home to a delicious dinner! It will make a tasty meal if served with pasta salad.
