Healthy Breakfast: Cinnamon Vanilla Granola

Ingredients
For Oats
- ¼ cup of maple syrup
- ½ tsp. of ground nutmeg
- ½ cup of wheat germ (toasted)
- 1 cup of chopped pecans (can be substituted with sliced almonds or sunflower seeds)
- 1 cup of dried cranberries (can be substituted with raisins or other dried fruits)
- 2 cups of quick oats
- 2 tbsp. of pure vanilla extract
- 2 tbsp. of Corn oil
- 3 cups of traditional oats
- 4 tsp. of ground cinnamon
For Yogurt Parfaits
- 6 ounces of vanilla yogurt
- ¼ cup of granola
- ½ cup of fresh or frozen fruits (mixed fruits)
Procedure
- In a large bowl, mix the quick oats, traditional oats, wheat germ, and pecans.
- Mix the maple syrup, vanilla, oil, nutmeg, and cinnamon in a small bowl. Pour the mixture over the oat mixture and stir to coat.
- Grease a baking sheet and spread the mixture on top.
- Bake at 300ᵒ for 50 minutes or an hour. Stir every 5 minutes until the oats are toasted.
- Remove the baking sheet from the oven and add the dried fruit. Place on a wire rack to cool .
- Mix the vanilla yogurt, mixed fruits, and granola in a bowl. Add the oats then serve.
