Easy Dinner: Sweet Coconut Shrimp

Ingredients
For the Coconut Shrimp:
2 cups of Bread Crumbs
2 cups of Shredded Sweetened Coconut
2 cups of All-Purpose Flour
Kosher Salt and Freshly Ground Black Pepper
24 Large Jumbo Shrimp; peeled and deveined
4 Large Eggs; beaten
Vegetable Oil or Extra Virgin Olive Oil; Frying
For the Dipping Sauce:
½ cup of Orange Marmalade
1-2 tablespoons of Dark Rum

Directions
- First, get a large bowl; combine the coconut, bread crumbs, salt and pepper.
- Place the flour, eggs and newly made bread crumb mixture into 3 separate bowls.
- Next for your easy dinner, comb the flour onto the shrimp and shake off the excess. Then you are going to dip the shrimp into the beaten eggs and rub against the side of the bowl to again remove the excess. Finally, coat the shrimp thoroughly with the bread crumbs.
- Line a baking sheet or platter with parchment paper, and once the shrimp have been covered lay them out on the parchment being sure that none are touching. In a Dutch oven, heat several inches of oil at 350 degrees F.
- And once the oil is hot enough fry the shrimp in groups and heat until the shrimp turn a golden brown (approx.. 3-4 minutes). Try not to overcrowd the shrimp or else it will take longer for them to cook thoroughly. Then remove them from the oil and let them drain on paper towels.
For the Dipping Sauce:
In a small saucepan, heat the orange marmalade on a low heat and add in rum (to taste).
