Healthy Dinner: Lemon-Pepper Balsamic Chicken Recipe

Ingredients

4 servings

4 chicken breast halves (boneless and skinless) or 12-16 chicken breast tenders

Chicken broth (1/4 cup)

Balsamic vinegar (1/3 cup)

Extra virgin olive oil (1-1/2 teaspoons)

2 minced garlic cloves

Lemon-pepper seasoning (2 teaspoons)

Butter (4 teaspoons)

For Garnish

Cherry tomatoes

Parsley sprigs

Preparation

  1. Lightly pound chicken to 1/4-inch on a solid surface with a meat tenderizer. You can use a zipper-lock bag too to pound the meat. In that case, use flat-surfaced tenderizer, not the ridged ones.
  2. Take the pounded chicken breasts and sprinkle lemon-pepper seasoning on their both sides. Press with your palm in order to make the seasoning adhere well to the sides.
  3. Pour oil in a big frying pan and heat to medium temperature.
  4. Add the pounded chicken breasts to the hot oil and fry. Turn once and keep frying until a fork can easily be inserted into them. Fry each side for approximately 7 minutes or until done. If you are using tenders instead of breast halves, cook for only 2 to 3 minutes each side.
  5. Stop the heat and move the fried breasts to a warm serving platter to keep them warm until serving.
  6. Mix together chicken broth, vinegar, and garlic in a medium bowl. Cook the mixture in a frying pan to a medium heat. Cook until the mixture becomes a bit thicker and syrupy. After that, add butter to the thick mixture and stir to melt.
  7. Place the chicken breasts on a serving dish and pour the sauce over them.
  8. Finish the preparation by garnishing them with cherry tomatoes and parsley sprigs.

Tips

  1. You can use fresh ground pepper and fresh lime juice instead of lemon-pepper. Additionally, a splash of red wine and apple juice will do if you are out of chicken broth.
  2. To make a complete meal, you can serve this chicken dish with a little rice and some green beans or salad, rolls, and mashed potatoes.
